OVEN-BAKED COD WITH TOMATOES
Ugnsbakad torsk på tomatbädd

Delicious fillet of cod, baked in the oven together with tomatoes, onions and garlic. Serve with a mix of fresh herbs and potatoes, preferably new potatoes.

Serves 4

14 oz fillets of cod or other white fish,
thawed if frozen
4 well ripened tomatoes
3 garlic cloves
2 fresh onions
0.2 cup white wine
0.8 cup fish bouillon
olive oil
salt, pepper

Fresh herb mix:
0.2 cup finely chopped dill
0.2 cup finely chopped chives
0.2 cup finely chopped parsley
0.2 cup finely chopped leek


Heat the oven to 390F. Cut the fish in 4 even-sized pieces and flavor with salt and pepper. 

Slice garlic and tomatoes and cut the onions in wedges. Put it all in an oven-proof pan. Bring wine and boullion to a boil and pour it in the pan. Flavor with some salt and pepper and bake in the oven for about 20 minutes. Take out the pan and put the fish on top of the tomatoes. Lower the heat to 300F and put the pan back in for about 15 minutes. Check the temperature of the fish, if it holds 140F it's done.

Take out the pan and sprinkle the herb mix over the fish. Serve with boiled potatoes and vegetables of your choice if you wish.

ALMOND CAKE WITH JAM AND CRÈME FRAÎCHE
Mandelkaka med sylt och crème fraîche

Home-made jam and whipped crème fraîche fills this juicy almond cake, which is even better if you bake and fill it one day before it's being eaten.

12 slices

Jam:
1 lb strawberries, raspberries and redcurrants
10½ oz special sugar made for making jam

Almond cake:
6 eggs (in yolks and whites)
0,8 cup sugar
10½ oz ground almonds or almond flour
0,4 cup flour
2 teaspoons baking powder

Filling:
0,8 cup crème fraîche
0,8 cup jam of a "steadier" type (0,4 + 0,4 cup)

Decoration:
7 oz strawberries
3½ oz redcurrants
powdered sugar


Make the jam according to package instructions. This is a special kind of sugar containing everything needed to make the jam perfect, which makes the jam-making very quick and easy. I don't know if you have it where you are.

Beat egg yolks and sugar until fluffy. Mix almonds, flour and baking powder and fold this into the yolk batter. Beat the egg Whites until stiff and fold them into the batter. Spread it out in a greased, floured pan (diameter 8 to 10 inches) with a removable bottom. Bake in the lower part of the oven at 350F for about 45 minutes and allow to cool.

Filling:
Beat the crème fraîche until really thick and mix with 0,4 cup jam. Split the cake in two. Cover the bottom layer with a thin layer of jam, then spread the crème fraîche mixture on top of the jam. Cover on side of the other layer with jam, then put this, jam side down onto the bottom layer. Wrap the cake up in plastic and preferably put it in the fridge until the next day.

Decorate with strawberries and redcurrants when serving. Dust with powdered sugar if you want.

CHICKEN STEW WITH MUSHROOMS AND BACON
Kycklinggryta med svamp och bacon

A creamy chicken stew with mushrooms and bell peppers. Sprinkle with crispy bacon and parsley and serve with e.g. rice and a salad. You're good to go!

Serves 4

1 lb chicken breast fillets
1 tablespoon Chinese soy sauce
9 oz fresh mushrooms
1 onion
2 tablespoons butter
1 teaspoon salt
some pepper of your choice
2 tablespoons concentrated veal fond
1,2 cup water
2 tablespoons tomato paste
2 teaspoons paprika
2 tablespoons redcurrant jelly
5 oz streaky bacon
1 cup cream
2 tablespoons flour
1 red bell pepper
3 tablespoons chopped parsley


Cut the chicken in pieces and mix with the soy sauce. Slice the mushrooms. Peel and roughly chop the onion. Sauté mushrooms and bacon in butter, take it up and fry the chicken. Flavor with salt and pepper.

Mix the onion-chicken mix in a pot and add veal fond, water, tomato paste, paprika and redcurrant jelly. Simmer slowly for about 5 minutes. Check for taste with salt and pepper.

Shred and fry the bacon. Mix cream and flour and stir this into the pot. Simmer for another 5 minutes. Shred the bell pepper and add towards the end of cooking.

Sprinkle with bacon and parsley and serve the stew with rice and a salad.
