Rhubarb Apple Pie with White Chocolate Sauce - Rabarber- och äppelpaj med vit chokladsås

RHUBARB APPLE PIE WITH WHITE CHOCOLATE SAUCE
Rabarber- och äppelpaj med vit chokladsås

Serves 8

3½ rhubarb stems
2 apples
2 tablespoons potato starch
0.3 cup cane sugar
1 teaspoon ground cardamom

Crumble dough:
1.2 cups flour
0.6 cup flaked coconut
0.3 cup sugar
5.3 oz butter
1 oz flaked almonds

White chocolate sauce:
1.2 cups regular milk
2 teaspoons cardamom seeds
2 egg yolks
0.2 cup sugar
1 tablespoon Maizena
5.3 oz white chocolate
2 cups heavy cream
1 tablespoon vanilla sugar


Preheat oven to 437F.

White chocolate sauce:
Heat the milk in a saucepan together with the whole cardamom seeds. Leave just beside the burner for 10 minutes with a lid on. Strain away the seeds and save the cardamom milk. Mix egg yolks, sugar, Maizena and milk in a stainless steel saucepan. Simmer while beating until it thickens and cool over a cold waterbath. Melt the chocolate in the microwave or over a hot waterbath, stir it into the cream and beat until thick. Mix the cream with the cardamom sauce and vanilla sugar. Leave in the fridge until serving.

Pie:
Trim and slice the rhubarb in ½-inch thick slices. Peel and dice the apples. Mix rhubarb and apples with potato starch, cane sugar and cardamom in a bowl. Grease a pie pan and put the mixture into it.

Crumble:
Put flour, sugar and flaked coconut in a bowl. Finely divide the butter in pieces in the flour mixture until you have a crumble. Sprinkle this over the fruit and also the flaked almonds. 

Bake the pie in the middle of the oven for about 25 minutes. Serve lukewarm with the chocolate sauce.

QUICK AND EASY SAUSAGE STEW
Snabb korvgryta

Serves 4

3 hot dogs or frankfurters
2 chorizos
1 tablespoon butter or margarine
1 red onion
1 carrot
0.8 cup water
7 oz cream cheese, garlic flavor
0.2 cup chili sauce
0.4 cup corn
1 tomato
some pepper

For serving:
pasta


Cut the sausages in pieces and fry them in a pot with butter. Peel onion and carrot. Chop the onion and dice the carrot. Sauté onion and carrot with the sausages. Add water, cream cheese and chili sauce and boil for 5 minutes. Add corn and diced tomatoes and flavor to taste with pepper. Heat through.

Serve with pasta.

Pork Chops with Bell Pepper Sauce - Fläskkotlett med paprikasås

PORK CHOPS WITH BELL PEPPER SAUCE
Fläskkotlett med paprikasås

Serves 2

2 pork chops
salt, pepper
butter or margarine for frying

Bell pepper sauce:
½ onion
3½ oz canned, grilled bell peppers
in liquid
0.4 cup creme fraiche
0.4 cup water
salt, pepper
some sugar
2 tablespoons fresh basil

For serving:
oven potatoes
boiled vegetables


Flavor the meat and fry in butter for 3 to 4 minutes on each side.

Bell pepper sauce:
Peel and chop the onion and put in a saucepan together with bell pepper and some of the marinade. Sauté until the onion is tender. Add creme fraiche and water and bring to a boil. Mix the sauce until smooth and flavor to taste with salt, pepper and sugar. Add shredded basil.

Serve with oven roast potatoes and boiled vegetables.

AND CUCUMBER SAUCE

Serves 2

7 oz fillets of sathe or cod fillets
in a frozen block, half-thawed
0.4 cup flour
1 egg
0.4 cup dried breadcrumbs
salt, white pepper
2 tablespoons butter or margarine

your own recipe for mashed potatoes

Cucumber sauce:
0.4 cup low-fat creme fraiche
1 tablespoon mayonnaise
2 tablespoons chopped, pickled gherkin

For serving:
salad


Fish fingers:
Cut the half-frozen fish in ½-inch thick slices. Coat them first in flour, then in beaten egg and last in dried breadcrumbs mixed with some salt and white pepper. Put the fish on baking paper and allow the coating to set for a while. Heat a frying pan and fry over medium heat for about 3 minutes on each side and the fish is nicely colored. 

Make your mashed potatoes.

Cucumber sauce:
Mix creme fraiche, mayonnaise and pickled gherkin in a bowl. (In Sweden we have something called "Boston gherkin" for some reason, it's a sweet pickle relish with gherkin, red bell pepper, onions and mustard seeds, among other spices.) Flavor to taste with salt and pepper. 

Serve the fish fingers with mashed potatoes, cucumber sauce and a salad.

8 pieces

1.2 cups flour
1 tablespoon sugar
4.4 oz butter
1 tablespoon regular milk

Filling:
2 to 3 peaches
1.7 oz butter
0.4 cup sugar
1 teaspoon vanilla sugar
7 oz almond paste
2 eggs
1 tablespoon flour

Icing:
0.8 cup powdered sugar
1 tablespoon water


Preheat oven to 392F.

Mix flour and sugar and finely divide the butter into it. Add milk and quickly work to a dough. Leave in the fridge for 30 minutes. Roll it out and place it in a round springform pan. Prick the dough layer and prebake for 10 minutes. Take it out and lower the heat to 347F.

Split the peaches and cut in wedges. Place them in the pan. Stir butter, sugar and vanilla sugar until smooth. Grate the almond paste and stir it in. Work the eggs into the batter, one by one, and last the flour. Spread this out over the peaches and bake for about 40 minutes.

Allow to cool. Stir the icing together and drizzle it over the cake.

0.8 cup water
3 tablespoons sugar
4 cups strawberries
4 scoops ice cream
almond biscuits


Bring water and sugar to a boil until the sugar has dissolved. Allow to cool completely. Trim and mix the strawberries until smooth. Mix with the syrup and dilute with some water if the soup is too thick. 

Serve the soup with ice cream and almond biscuits.

4 pastries

2 egg whites
some fresh lemon juice
0.4 cup sugar

Filling:
0.8 cup heavy cream
0.4 cup raspberry jam

Decoration:
fresh raspberries
powdered sugar
fresh mint or lemon balm


Preheat oven to 257F.

Beat egg whites and lemon juice with sugar to a firm meringue in a clean bowl with clean beaters. Pipe out 12 rounds, approx 2 inches in diameter, on a baking paper. Bake in the middle of the oven until the meringue feels airy and dry to the touch, about 50 minutes. Place them on a rack.

Beat the cream until thick in a bowl and add raspberry jam. Put the meringues together 3 and 3 with raspberry cream in between and on the top. Decorate with raspberries, sifted powdered sugar and mint or lemon balm.

Quick and Easy Bacon Pasta - Snabba baconpastan

QUICK AND EASY BACON PASTA
Snabba baconpastan

Serves 4

4 servings spaghetti or other
pasta you like
2½ tablespoons olive oil
2 garlic cloves
approx 1 teaspoon sambal oelek
9.7 oz streaky bacon, sliced
leafy parsley
salt, black pepper

For serving:
Parmesan cheese
tomato salad with red onion


Preheat oven to 392F. Boil the pasta.

Pour the oil in a large, oven-proof pan. Add crushed garlic and sambal oelek (taste your way ahead, it's strong!). Cut the bacon in pieces, put them in the pan and blend. Cook in the oven for 15 to 20 minutes.

Add pasta and chopped parsley to the pan and stir until everything is blended. Flavor to taste with salt and pepper (remember that the bacon is rather salty). Serve with grated Parmesan and a mixed salad with tomatoes and red onion.

Serves 4

4 pork chops
salt, pepper
2 tablespoons butter
3½ oz blue cheese, e.g. Saint Agur
1 tablespoon concentrated veal fond
0.8 cup cream
0.4 cup walnuts

For serving:
pasta of your choice
fresh baby spinach
tomato wedges


Boil the pasta. Mix with baby spinach just before serving.

Wipe off the meat and make a few cuts in the rind. Flavor the meat with salt and pepper. Heat up a large frying pan, melt the butter and fry the pork chops  for 2 minutes or so on each side. Add crumbled blue cheese, veal fond and cream and boil for 5 minutes. Sprinkle with crushed walnuts before serving with tomato wedges, pasta and spinach.

STRAWBERRY ICE CREAM

Serves 6

1.1 lb strawberries
3 egg yolks
0.3 cup sugar
0.2 cup water
1.2 cups heavy cream

Decoration:
strawberries


Rinse and trim the strawberries. Mix to a smooth puré.

Mix egg yolks, sugar and water in a saucepan and simmer while stirring to a thick creme. Allow to cool. Stir in the strawberry puré, beat the cream and gently stir it in and pour it all in a freezer-proof container.

Freeze for at least 4 hours, unmould and decorate with strawberries.

1 cup macaroni
1 tablespoon flour
0.8 cup regular milk
0.2 cup cooking cream
salt, pepper
8.8 oz Falu sausage
butter or margarine for frying

For serving:
tomato salad


Boil the macaroni and drain them. Beat the flour into the milk and bring to a boil while stirring. Add cream and boil for 3 minutes. Stir in the macaroni and flavor to taste with salt and pepper.

Slice the Falu sausage and fry in butter in a frying pan. Serve with a tomato salad.

Serves 2

8.8 oz boneless pork, sliced
2 tablespoons flour
salt, pepper
butter or margarine for frying

Cheese sauce:
0.6 cup regular milk
0.2 cup cream
1 tablespoon concentrated veal fond
1.7 oz blue cheese, preferably a creamy kind
salt, pepper
2 tablespoons finely chopped parsley

For serving:
potatoes
roast root vegetables


Mix flour, salt and pepper and coat the meat on both sides with the mixture. Fry the meat in some butter in a frying pan over medium heat, approx 3 minutes on each side.

Cheese sauce:
Bring milk, cream and veal fond to a boil. Crumble the cheese into it and let it melt. Flavor to taste with salt and pepper and sprinkle with parsley. 

Serve with potatoes and roast roots of your choice.

WITH OVEN ROAST POTATOES

Serves approx 2

4 potatoes
1½ carrots
oil
salt

Ground beef patties:
10.6 oz ground beef
salt, pepper
½ teaspoon crumbled tarragon
2 teaspoons potato starch
1 small egg
3 tablespoons water
1 teaspoon Dijon mustard


Preheat oven to 437F.

Peel potatoes and carrots and cut them in smaller pieces. Put them in a greased, oven-proof dish. Drizzle with oil and sprinkle with salt and blend. Put the dish in the middle of the oven and roast for about 30 minutes or until tender.

Work the ground beef together with the other ingredients to a smooth mixture that you shape into 4 patties. Fry until golden for 2 to 3 minutes on each side. Serve with potatoes, carrots and a green salad.

MUSTARD BALTIC HERRING FROM GOTLAND
Gotländsk senapsströmming

Gotland is an island outside the south-east coast of Sweden. I've never been there, but it's famous for so many things - the Middle Age Week, the old wall around the city of Visby, the scenery, the sheep, and so much more I don't know anything about.

Serves approx 4

1 lb 5 oz gutted and trimmed 
Baltic herring
3/4 teaspoon salt
0.4 cup finely chopped dill
butter or margarine
2 egg yolks
2½ tablespoons coarsely ground,
sweet mustard
0.8 cup heavy cream
some black pepper
1 tablespoon dried breadcrumbs

Decoration:
chopped dill and chives

For serving:
new potatoes
salad


Preheat oven to 392F.

Cut off the back fin and rinse the fish well under running cold water. Drain. Put the fish on a carving board with the meaty side up. Sprinkle with salt and dill. Roll up and put in a greased, oven-proof dish. Beat together egg yolks, mustard, cream and black pepper and pour this over the fish. Sprinkle with breadcrumbs. 

Put the dish in the middle of the oven and bake for about 30 minutes. Decorate with dill and chives and serve with boiled new potatoes and a salad.

3½ oz almonds
3 egg whites
0.4 cup sugar
vanilla whip
strawberries


Preheat oven to 347F.

Grind the almonds. Beat the egg whites until stiff. Blend together sugar and almonds and gently stir it into the egg whites. Spread out the batter in a greased and floured baking pan, diameter approx 9 inches. Bake in the lower part of the oven for about 25 to 30 minutes. Unmould the cake and allow to cool.

Beat the vanilla whip and serve with the cake together with fresh strawberries.

RICE CHERRY PANCAKE
Rispannkaka med körsbär

Serves 4

1 tablespoon liquid butter or margarine
2 cups regular milk
0.4 cup whole-grained rice
0.6 cup pitted cherries
0.2 cup almonds
3 eggs
0.2 cup Maizena 
1 tablespoon sugar
some salt

For serving:
pitted cherries


Preheat oven to 392F.

Heat the fat in a saucepan and add milk and rice. Bring to a boil and set aside. Leave with the lid on for about 30 minutes. 

Roughly chop the cherries as well as the almonds. Sprinkle it in a greased, oven-proof roasting pan, approx 8 x 12 inches. Beat the eggs with the Maizena mixture and stir it with the rice. Flavor with sugar and salt and pour in the roasting pan. Bake in the oven for 30 minutes.

Cut the pancake in squares and serve with extra cherries and also whipped cream, if you wish.

Raspberry Apple Tiramisú - Hallon- och äppeltiramisú

RASPBERRY APPLE TIRAMISÚ
Hallon- och äppeltiramisú

Serves approx 8

1.6 cups heavy cream
3 tablespoons sugar
1½ teaspoon vanilla sugar
7 oz raspberries
1½ tablespoons cranberry juice
4 gelatin sheets
or 2 teaspoons gelatin powder
0.4 cup apple juice
12.3 oz mascarpone cheese
approx 14 savoiardi biscuits

Raspberry sauce:
8.8 oz raspberries
powdered sugar to taste


Beat cream, sugar and vanilla sugar firm and foamy. Put raspberries and cranberry juice in a food processor or mixer and make a puré. Stir this into the cream. Soak the gelatin sheets in cold water for 5 minutes or do as you normally do with the powder. Pour 1½ tablespoons of the apple juice in a small saucepan and bring to boiling point. Squeeze out the liquid from the gelatin and melt them in the saucepan. Cool slightly before stirring it into the cream mixture.

Add mascarpone and stir to a smooth mixture. Dress an oblong baking pan with high walls with plastic foil. Spoon a layer of batter in the bottom. Dip the biscuits quickly in the apple juice and divide them on top of the creme. Alternate creme and biscuits and finish with creme. Cover the pan and store in a cold place, preferably overnight.

Put the raspberries in the food processor and mix until smooth. Flavor to taste with powdered sugar. 

Unmould the tiramisú and cut in slices. Serve with the sauce. Decorate if desired with lemon balm and some fresh raspberries.

2.6 oz butter or margarine
1.2 cups sugar
5 egg yolks (save the whites for
the meringue)
2.4 cups flour
1 tablespoon baking powder
1 tablespoon vanilla sugar
0.9 cup regular milk
3 tablespoons boiling water

Meringue:
5 egg whites
1.6 cups sugar
1 tablespoon vanilla sugar
1.6 cups redcurrants, trimmed


Preheat oven to 392F.

Stir room-tempered butter with sugar until white and fluffy. Stir in the egg yolks. Mix flour, baking powder and vanilla sugar and stir this into the batter together with milk and water. Spread out the batter in a baking paper-lined roasting pan, about 12 x 16 inches. Bake for 15 minutes.

Meringue:
Beat the egg whites until stiff. Stir in sugar and vanilla sugar and gently stir in the redcurrants. Spread the meringue over the cake, increase the heat to 482F and bake for 5 minutes more. Allow to cool and cut in squares.

MAZARIN PIE
Mazarinpaj

1 pie, 8 to 10 pieces

Shortcrust dough:
1.6 cups flour
0.2 cup sugar
7 oz butter
1 egg yolk

Filling:
2.6 oz soft butter
0.8 cup sugar
2 eggs
2 potatoes, boiled, cold and grated
0.4 cup ground almonds
3 ground bitter almonds 
or 3 drops bitter almond essence
0.3 cup flour
1½ teaspoon baking powder

Icing:
1.2 cups powdered sugar
2½ tablespoon fresh lemon juice

Decoration:
lavender flowers


Mix flour, sugar, butter and egg yolk for the shortcrust in the food processor bowl. Press out the dough in a springform pan, diameter 4 x 12 inches.

Stir fat and sugar for the filling. Add one egg at a time. Add potatoes, almonds and flour mixed with baking powder. Fill the pan with the batter to about 2/3. Bake in the middle of the oven for about 30 minutes. Allow the pie to cool on a rack.

Mix powdered sugar and lemon juice to a smooth icing and spread it over the mazarin pie when it's cold. Decorate with lavender flowers if you wish.

Serves 4

3 ripe peaches
1.2 cup vanilla creme (from mix)
0.4 cup heavy cream
½ bag small almond biscuits
2 tablespoons sherry
2 cups raspberries
lemon balm


Put the peaches in boiling water and leave them in for about 30 seconds. Take them up and put them in icy water. Peel them, remove the stones and dice the pulp. Make the vanilla creme, beat the cream and stir it into the vanilla creme.

Crush the almond biscuits. Put some of it in the bottom of 4 serving glasses. Drip the sherry over the crumbles. Divide peaches, raspberries and vanilla creme onto it, finish with vanilla creme and remaining biscuits. Decorate with raspberries and lemon balm'.

You can also use canned, drained peaches for the dessert.

10.6 oz white fish fillets, e.g. cod
salt, pepper
1 tablespoon fresh lemon juice
1½ tablespoons butter and margarine
1 tablespoon dried breadcrumbs
1.7 oz flaked almonds

For serving:
boiled potatoes
green beans
lemon wedges


Preheat oven to 392F.

Cut the fillets in 2 pieces and put them in a greased, oven-proof pan. Sprinkle with salt and pepper and drizzle with lemon juice.

Mix butter or margarine, breadcrumbs and flaked almonds and spread this over the fish. Fry in the middle of the oven for about 8 minutes. Serve with boiled potatoes, green beans and lemon wedges.

"Queen" Panna Cotta with Lemon Topping - Drottningpannacotta med citrontopping

"QUEEN" PANNA COTTA WITH LEMON TOPPING

Serves 8

4 gelatin sheets
or 2 teaspoons gelatin powder
8.8 oz frozen, thawed raspberries
0.4 cup sugar
grated zest from ½ lemon
1.4 cups heavy cream
1.4 cups vanilla yogurt

Topping:
2 gelatin sheets
or 1 teaspoon gelatin powder
1.2 cup creme fraiche
0.2 cup fresh lemon juice
grated zest from ½ lemon

Decoration:
raspberries
blueberries
fresh mint


Soak the gelatin in cold water for 5 minutes, or do as you normally do with the powder. Squeeze out excess liquid from the sheets and melt them in a cup in the microwave for 10 seconds, or over low heat in a saucepan.

Mix raspberries, blueberries and sugar in a food processor or mixer. Add lemon zest, cream and vanilla yogurt. Mix the melted gelatin with 0.4 cup of the panna cotta mixture. Stir in this in remaining panna cotta mixture and process for 30 seconds. Divide the mixture in serving glasses and leave in the fridge for at least 2 hours.

Topping:
Soak the gelatin in cold water for 5 minutes (proceed as above). Add the creme fraiche while stirring and then add lemon juice and zest. Pour or spoon this over the set panna cotta and leave to set in the fridge for about 30 minutes.

Decorate with raspberries, blueberries and fresh mint.

1 cake, 10 pieces

3½ oz milk chocolate
1.7 oz butter
2 eggs
0.6 cup brown sugar
0.8 cup flour
1 teaspoon baking powder
0.2 cup porter

Filling:
3½ oz milk chocolate

Decoration:
1.7 oz white chocolate

For serving:
porter


Preheat oven to 347F.

Break the chocolate in pieces and melt it together with butter in a saucepan. Beat eggs and brown sugar until fluffy. Stir in the flour mixed with baking powder, chocolate mixture and porter into the egg-sugar mixture. Line a springform pan, diameter approx 9 inches, with a baking paper. Pour the batter in the pan, chop the milk chocolate and sprinkle it over the surface. Bake in the lower part of the oven for 15 to 17 minutes. Bang the pan into the kitchen counter, that way the cake will get perfectly sticky in the middle. Leave to cool and put in the fridge, preferably overnight.

Melt white chocolate in a bowl in the microwave or over a hot waterbath. Drizzle the chocolate over the cake. If you wish, serve with a glass of porter.
