FISH FINGERS WITH MASHED POTATOES
AND CUCUMBER SAUCE
Fiskpinnar med potatismos och gurksås
Serves 2
7 oz fillets of sathe or cod fillets
in a frozen block, half-thawed
0.4 cup flour
1 egg
0.4 cup dried breadcrumbs
salt, white pepper
2 tablespoons butter or margarine
your own recipe for mashed potatoes
Cucumber sauce:
0.4 cup low-fat creme fraiche
1 tablespoon mayonnaise
2 tablespoons chopped, pickled gherkin

Fish fingers:
Cut the half-frozen fish in ½-inch thick slices. Coat them first in flour, then in beaten egg and last in dried breadcrumbs mixed with some salt and white pepper. Put the fish on baking paper and allow the coating to set for a while. Heat a frying pan and fry over medium heat for about 3 minutes on each side and the fish is nicely colored.
Make your mashed potatoes.
Cucumber sauce:
Mix creme fraiche, mayonnaise and pickled gherkin in a bowl. (In Sweden we have something called "Boston gherkin" for some reason, it's a sweet pickle relish with gherkin, red bell pepper, onions and mustard seeds, among other spices.) Flavor to taste with salt and pepper.
Serve the fish fingers with mashed potatoes, cucumber sauce and a salad.
