FISH AU GRATIN MEXICAN STYLE WITH SALSA
Mexikansk fiskgratäng med salsa
Serves 4
1 lb 5 oz fillet of cod or other
white fish
1 teaspoon salt
some pepper
7 oz ready-made tomato salsa
(or home-made of course!)
8.8 oz cherry tomatoes, split
3½ oz grated cheese
1 can, 8 oz, boiled chickpeas
2½ oz baby spinach
1 tablespoon butter
Put the fish in an oven-proof pan and sprinkle with salt and pepper. Pour over the salsa. Spread out the split cherry tomatoes over the fish, sprinkle with grated cheese and bake in the oven at 437F for about 20 minutes.
Sauté chickpeas and baby spinach in butter and serve with the gratin.
