"Queen" Panna Cotta with Lemon Topping - Drottningpannacotta med citrontopping

"QUEEN" PANNA COTTA WITH LEMON TOPPING
Drottningpannacotta med citrontopping

Serves 8

4 gelatin sheets
or 2 teaspoons gelatin powder
8.8 oz frozen, thawed raspberries
0.4 cup sugar
grated zest from ½ lemon
1.4 cups heavy cream
1.4 cups vanilla yogurt

Topping:
2 gelatin sheets
or 1 teaspoon gelatin powder
1.2 cup creme fraiche
0.2 cup fresh lemon juice
grated zest from ½ lemon

Decoration:
raspberries
blueberries
fresh mint


Soak the gelatin in cold water for 5 minutes, or do as you normally do with the powder. Squeeze out excess liquid from the sheets and melt them in a cup in the microwave for 10 seconds, or over low heat in a saucepan.

Mix raspberries, blueberries and sugar in a food processor or mixer. Add lemon zest, cream and vanilla yogurt. Mix the melted gelatin with 0.4 cup of the panna cotta mixture. Stir in this in remaining panna cotta mixture and process for 30 seconds. Divide the mixture in serving glasses and leave in the fridge for at least 2 hours.

Topping:
Soak the gelatin in cold water for 5 minutes (proceed as above). Add the creme fraiche while stirring and then add lemon juice and zest. Pour or spoon this over the set panna cotta and leave to set in the fridge for about 30 minutes.

Decorate with raspberries, blueberries and fresh mint.
