APPLE SOUP
Äppelsoppa
Serves 4
3.2 cups water
0.4 cup concentrated apple juice
0.2 cup sugar
1 piece whole cinnamon
0.4 cup raisins
3 apples
1½ tablespoons potato starch
1 teaspoon fresh lemon juice
Bring water, apple juice, sugar, cinnamon and raisins to a boil. Peel, core and cut the apples in pieces. Put them in the liquid and boil for a couple of minutes until almost tender. Stir the potato starch in some water and stir this thickening into the soup. Bring to a boil and remove from heat. Flavor to taste with lemon juice.
Serve the soup hot or cold.
