ALMOND COD WITH LEMON
Mandeltorsk med citron
Serves 2
10.6 oz white fish fillets, e.g. cod
salt, pepper
1 tablespoon fresh lemon juice
1½ tablespoons butter and margarine
1 tablespoon dried breadcrumbs
1.7 oz flaked almonds
For serving:
boiled potatoes
green beans
lemon wedges
Preheat oven to 392F.
Cut the fillets in 2 pieces and put them in a greased, oven-proof pan. Sprinkle with salt and pepper and drizzle with lemon juice.
Mix butter or margarine, breadcrumbs and flaked almonds and spread this over the fish. Fry in the middle of the oven for about 8 minutes. Serve with boiled potatoes, green beans and lemon wedges.
