REDCURRANT SQUARES

2.6 oz butter or margarine
1.2 cups sugar
5 egg yolks (save the whites for
the meringue)
2.4 cups flour
1 tablespoon baking powder
1 tablespoon vanilla sugar
0.9 cup regular milk
3 tablespoons boiling water
Meringue:
5 egg whites
1.6 cups sugar
1 tablespoon vanilla sugar
1.6 cups redcurrants, trimmed
Preheat oven to 392F.
Stir room-tempered butter with sugar until white and fluffy. Stir in the egg yolks. Mix flour, baking powder and vanilla sugar and stir this into the batter together with milk and water. Spread out the batter in a baking paper-lined roasting pan, about 12 x 16 inches. Bake for 15 minutes.
Meringue:
Beat the egg whites until stiff. Stir in sugar and vanilla sugar and gently stir in the redcurrants. Spread the meringue over the cake, increase the heat to 482F and bake for 5 minutes more. Allow to cool and cut in squares.
