Strawberry Pie - Jordgubbspaj

STRAWBERRY PIE
Jordgubbspaj

1 pie, 8 to 10 pieces

5.3 oz butter or margarine
0.6 cup sugar
1 egg
0.4 cup potato starch
0.8 cup flour
1 teaspoon baking powder

Filling:
2 cups fresh strawberries
0.8 cup creme fraiche
0.4 cup sugar
0.2 cup flour
2 eggs

Decoration:
powdered sugar


Preheat oven to 392F.

Stir fat and sugar until light and fluffy. Add the egg while stirring vigorously. Mix potato starch, flour and baking powder and work this into the batter. Pour in a greased and floured baking pan, diameter about 9 inches, and bake in the lower part of the oven for about 10 minutes.

Trim the strawberries. Beat creme fraiche and sugar, flour and eggs. 

Take out the cake and divide the strawberries over the surface. Pour the creme fraiche mixture over it all, put back in the oven and bake for another 30 to 40 minutes. Allow to cool. Sift with powdered sugar.
