CHEESE-FILLED BALTIC HERRING WITH
CRUSHED POTATOES
Ostfylld strömming med krossad potatis
Serves 4
1 lb 5 oz Baltic herring fillets
0.2 cup dried breadcrumbs
1 teaspoon salt
some white pepper
4 tablespoons butter
Filling:
5.3 oz sliced cheese
0.4 cup pesto genovese
Crushed potatoes:
8 new potatoes
1 oz butter or margarine
2 teaspoons flaked salt
2 tablespoons chopped dill
Cut off the back fin from the fillets. Rinse well and pair together two and two after size. Pour the breadcrumbs on a plate. Put half of the fillets with the meaty side up and sprinkle with salt and pepper. Divide cheese and pesto on the fish and place the other half of the fish on top. Coat them with the breadcrumbs.
Boil the potatoes and crush them against the plate. Put on butter and sprinkle with salt and dill. Fry the fish for about 2 minutes on each side in butter in a frying pan. Turn them around with a spoon and a spatula.
Serve the Baltic herring with the potatoes, grated carrots, radishes and lemon.
