FRENCH GROUND BEEF PATTIES
WITH OVEN ROAST POTATOES

4 potatoes
1½ carrots
oil
salt
Ground beef patties:
10.6 oz ground beef
salt, pepper
½ teaspoon crumbled tarragon
2 teaspoons potato starch
1 small egg
3 tablespoons water
1 teaspoon Dijon mustard
Preheat oven to 437F.
Peel potatoes and carrots and cut them in smaller pieces. Put them in a greased, oven-proof dish. Drizzle with oil and sprinkle with salt and blend. Put the dish in the middle of the oven and roast for about 30 minutes or until tender.
Work the ground beef together with the other ingredients to a smooth mixture that you shape into 4 patties. Fry until golden for 2 to 3 minutes on each side. Serve with potatoes, carrots and a green salad.
