APPLE PASTRY WITH CINNAMON ICE CREAM

8 pastries
1 chilled puff pastry roll
1 egg
2 apples
2 tablespoons white molasses
2 tablespoons chopped pistachios
Cinnamon ice cream:
4 cups vanilla ice cream
2 teaspoons ground cinnamon
Decoration:
lemon balm
Preheat oven to 437F.
Ice cream:
Stir the vanilla ice cream until smooth in a bowl and mix the cinnamon into it. Put in a jar or plastic can and freeze again.
Roll out the puff pastry and cut out 6 to 8 rectangles. Make a cut in each, approx ½ inch from the edge all around. Brush the edge with beaten egg, fold it in and attach it. Brush the edge on the upper side as well and prick with a fork.
Split, core and thinly slice the apples. Distribute them on the bottom of the puff pastry plates and brush with white molasses. Sprinkle with pistachios and bake in the middle of the oven for 10 to 12 minutes until the pastries are nicely colored. Decorate with lemon balm and serve with the cinnamon ice cream.
