PLUM ALMOND PIE
Plommonpaj med mandelmassa
1 pie, 8 to 10 pieces
Pie dough:
1.6 cups flour
some baking powder
0.2 cup cane sugar
some salt
3½ oz butter
2 tablespoons almond liqueur,
e.g. Amaretto
Filling:
15 plums
3 tablespoons sugar
1 teaspoon cardamom
1.7 oz almond paste
2 eggs
0.8 cup cream
For serving:
lightly whipped cream
Preheat oven to 437F.
Mix flour, baking powder, cane sugar and salt in a food processor. Add butter and process until you have a crumbly mixture. Add almond liqueur and work until you have a dough ball. Press out the dough in a pie pan with a diameter of about 10 inches.
Filling:
Split the plums and remove the stones. Put them in the pan, cupped side up. Sprinkle with sugar and cardamom and bake in the middle of the oven for about 15 minutes.
Take it out, grate the almond paste and sprinkle it over the surface. Beat eggs and cream and pour this over the filling. Bake for another 20 minutes or so until the filling has set.
Serve the pie with lightly whipped cream.
