STRAWBERRY PASTRY

4 pastries
1 chilled puff pastry roll
1 egg
1 tablespoon cane sugar
Filling:
8.8 oz strawberries
0.8 cup heavy cream
2 tablespoons lemon curd
Decoration:
lemon balm
Preheat oven to 437F.
Roll out the puff pastry on the work surface and measure out 4 rather large and 4 smaller rounds with a cookie cutter. Put the rounds on a paper-lined baking plate and brush them with beaten egg. Sprinkle with cane sugar and bake in the middle of the oven for about 5 minutes until colored.
Filling:
Rinse and slice 8 strawberries and split the rest. Beat the cream until thick and mix with lemon curd.
Put the larger rounds on serving plates and pipe the cream in the middle. Push in sliced strawberries. Put the smaller rounds on like a lid. Decorate with lemon balm and put the split strawberries on the side.
