GROUND MEAT SOUP WITH CHEESE CREME
Köttfärssoppa med ostkräm
Serves 4
1 onion
½ leek
5 potatoes
1 small squash
3 tomatoes
1.1 lb ground meat, beef + pork
butter for frying
3 tablespoons tomato paste
5.2 cups water
3 tablespoons concentrated veal fond
10.6 oz canned corn
1 teaspoon salt
some black pepper
2 tablespoons fresh basil,
finely chopped
Cheese creme:
0.4 cup creme fraiche
0.2 cup grated cheese
Decoration and serving:
fresh basil
baguettes
ready-made pesto, canned,
or home-made of course
Peel and finely chop the onion. Split, clean and finely slice the leek. Peel and dice the potatoes. Finely dice the squash and dice the tomatoes. Brown the ground meat in a pot with butter. Add onion, leek, potatoes, squash and tomato paste and sauté for about 2 minutes. Add water, veal fond, corn and diced tomatoes and boil for about 10 minutes. Flavor to taste with salt and pepper and stir in the basil.
Cheese creme:
Stir together creme fraiche and cheese.
Serving:
Top the soup with cheese creme and decorate with basil. Serve with sliced baguette, roasted in the oven, and spread them with some pesto.
