CHICKEN STEW WITH SPINACH AND BLUE CHEESE
Kycklinggryta med spenat och ädelost
Serves 4
1 lb 5 oz chicken breast fillets
1 tablespoon Chinese soy sauce
1 tablespoon butter
1 teaspoon salt
some white pepper
0.8 cup creme fraiche
1.7 oz fresh spinach
3½ oz blue cheese
For serving:
0.8 cup red lentils
shredded red cabbage
diced tomatoes
Simmer the lentils for 10 minutes. Shred the chicken and mix with soy sauce. Fry the chicken in turns in butter. Flavor with salt and pepper, pour 0.4 cup water in the pan and simmer for 5 minutes. Add creme fraiche and simmer for a few minutes more.
Rinse the spinach and stir it into the pan. Sprinkle with crumbled blue cheese.
Serve the stew with lentils, shredded red cabbage and tomatoes.
