FILLET OF PORK STEW WITH STRAWBERRIES
AND CHÈVRE
Snabb gryta med fläskfilé, jordgubbar och chèvrekräm
Serves 8
2 fillets of pork, in all approx 2.2 lbs
2 tablespoons Chinese soy sauce
2 tablespoons butter
1½ teaspoons salt
some pepper
1.6 cups pan juices and water
½ teaspoon sambal oelek
0.4 cup red wine
3 tablespoons concentrated veal fond
1 tablespoon redcurrant jelly
2 tablespoons corn flour
Decoration:
1.7 oz strawberries
parsley
Chèvre creme:
3½ oz chèvre or feta cheese
0.8 cup creme fraiche
Slice the meat and mix it with soy sauce. Brown in turns in butter in a frying pan, sprinkle with salt and pepper and transfer to a pot or a shallow, wide saucepan. Rinse out the pan with water between each turn and reserve the pan juices. Measure the juices (fill up with water to required amount if needed) and pour in a saucepan with sambal, wine, veal fond, redcurrant jelly and flour. Bring to a boil while stirring and simmer for a few minutes. Flavor to taste with salt and pepper. Pour the sauce over the meat and simmer it all for 5 minutes. Decorate with split strawberries and chopped parsley.
Make the cheese creme and serve with the stew, together with pasta or boiled new potatoes.
