RICE CHERRY PANCAKE
Rispannkaka med körsbär
Serves 4
1 tablespoon liquid butter or margarine
2 cups regular milk
0.4 cup whole-grained rice
0.6 cup pitted cherries
0.2 cup almonds
3 eggs
0.2 cup Maizena
1 tablespoon sugar
some salt
For serving:

Preheat oven to 392F.
Heat the fat in a saucepan and add milk and rice. Bring to a boil and set aside. Leave with the lid on for about 30 minutes.
Roughly chop the cherries as well as the almonds. Sprinkle it in a greased, oven-proof roasting pan, approx 8 x 12 inches. Beat the eggs with the Maizena mixture and stir it with the rice. Flavor with sugar and salt and pour in the roasting pan. Bake in the oven for 30 minutes.
Cut the pancake in squares and serve with extra cherries and also whipped cream, if you wish.
