PORK CHOPS WITH WALNUTS AND CHEESE SAUCE
Festkotlett i ostsås med valnötter
Serves 4
4 pork chops
salt, pepper
2 tablespoons butter
3½ oz blue cheese, e.g. Saint Agur
1 tablespoon concentrated veal fond
0.8 cup cream
0.4 cup walnuts
For serving:
pasta of your choice
fresh baby spinach
tomato wedges
Boil the pasta. Mix with baby spinach just before serving.
Wipe off the meat and make a few cuts in the rind. Flavor the meat with salt and pepper. Heat up a large frying pan, melt the butter and fry the pork chops for 2 minutes or so on each side. Add crumbled blue cheese, veal fond and cream and boil for 5 minutes. Sprinkle with crushed walnuts before serving with tomato wedges, pasta and spinach.
