Apple Pancake with Fried Bacon - Äppelpannkaka med stekt bacon

APPLE PANCAKE WITH FRIED BACON
Äppelpannkaka med stekt bacon

Serves 4

0.8 cup flour
2 cups regular milk
3 eggs
some salt
2 large apples
2 teaspoons ground cinnamon
5½ tablespoons cane sugar

For serving:
4.4 oz bacon of the more meaty
kind, not so streaky
a salad of cabbage and
lingonberry jam, a very popular
combination in Sweden


Preheat oven to 437F.

Grease a roasting pan, 10 x 14 inches, with butter. Beat flour and half the milk in a bowl to a lump-free batter. Add remaining milk and the eggs. Beat until smooth and add salt.

Peel, core and slice the apples. Put them in the pan and sprinkle with cinnamon and cane sugar. Pour the pancake batter in the pan and bake in the lower part of the oven for about 30 minutes, until the pancake is nicely colored. Cut in pieces.

Fry the bacon in a frying pan with very little fat, about 15 seconds on each side. Serve with the pancake and cabbage salad.
