CHICKEN AU GRATIN WITH BACON,
MOZZARELLA AND BELL PEPPER SAUCE
Kycklinggratäng med bacon och mozzarella
i paprikasås
Serves 4
4 chicken breast fillets
1 ball of mozzarella, approx 4.4 oz
8 fresh basil leaves
9.7 oz streaky bacon, sliced
1 teaspoon salt
some black pepper
2 tablespoons butter
Gratin sauce:
0.8 cup creme fraiche flavored with
bell peppers (I have no idea if you can
get that where you are …)
0.8 cup heavy cream
0.2 cup fresh basil, chopped
0.4 cup ripe, grated cheese
Decoration:
cherry tomatoes
fresh basil
For serving:
pasta
grated Parmesan cheese
Trim the chicken and make a cut lengthwise in each. Cut the mozzarella in pieces and stuffthem with cheese and basil. Wrap sliced bacon around the chicken, secure with a toothpick if necessary. Flavor with salt and pepper and brown on all sides in butter in a frying pan. Transfer to a greased oven-proof pan.
Sauce:
Stir the creme fraiche with cream and finely chopped basil. Pour this over the chicken and sprinkle the cheese over it all.
Bake in the lower part of the oven at 392F for 35 to 40 minutes. Cover with aluminum foil if it gets too dark, increase the heat to 437F towards the end if it doesn't color. Decorate with cherry tomatoes that you add to the pan during the last 15 minutes if you wish) and basil leaves.
Serve with pasta and grated Parmesan cheese.
