Pork Schnitzel with Cheese Sauce - Skinkschnitzel med ostsås

PORK SCHNITZEL WITH CHEESE SAUCE
Skinkschnitzel med ostsås

Serves 2

8.8 oz boneless pork, sliced
2 tablespoons flour
salt, pepper
butter or margarine for frying

Cheese sauce:
0.6 cup regular milk
0.2 cup cream
1 tablespoon concentrated veal fond
1.7 oz blue cheese, preferably a creamy kind
salt, pepper
2 tablespoons finely chopped parsley

For serving:
potatoes
roast root vegetables


Mix flour, salt and pepper and coat the meat on both sides with the mixture. Fry the meat in some butter in a frying pan over medium heat, approx 3 minutes on each side.

Cheese sauce:
Bring milk, cream and veal fond to a boil. Crumble the cheese into it and let it melt. Flavor to taste with salt and pepper and sprinkle with parsley. 

Serve with potatoes and roast roots of your choice.
