Cod in the Oven - Torsk i ugnen

COD IN THE OVEN
Torsk i ugnen

Serves 2

10.6 oz fillet of cod
salt, pepper
0.6 cup cooking cream
(not as fat as heavy cream)
0.2 cup ajvar relish (I think you
can get it where you are too)
3 tablespoons chopped parsley
0.4 cup grated cheese

For serving:
riced boiled potatoes
boiled peas and carrots


Preheat oven to 437F.

Cut the fish in pieces and put in a greased, oven-proof pan. Flavor with salt and pepper. Stir together cream, ajvar relish and parsley och pour this over the fish. Sprinkle with cheese and bake in the oven for 20 minutes. 

Serve with potatoes and boiled vegetables.
