PEACH ALMOND PIE

Serves 6
Pie dough:
1.2 cups flour
2 tablespoons sugar
1 teaspoon baking powder
5.3 oz butter or margarine
Filling:
1 can peaches, approx 16 oz
Almond cover:
3 eggs
0.2 cup sugar
0.4 cup almonds
2 tablespoons flour
Preheat oven to 437F.
Chop together flour, sugar, baking powder and butter to a crumbly mixture and work to a dough. Roll it out and place it in a pie pan, diameter approx 9 inches. Put in the fridge for 30 minutes. Pre-bake for 10 minutes, then take it out and lower the heat to 347F.
Drain the peaches well and put them in the pan, cupped side up.
Separate the eggs in yolks and whites. Beat the yolks until fluffy with the sugar. Chop the almonds finely, mix them with flour and stir this into the egg yolk mixture. Beat the egg whites until stiff and turn them into the batter, spread this over the peaches and bake for 20 minutes.
