HASSELBACK POTATOES WITH BACON AND CHEESE
Hasselbackspotatis med bacon och ost
Serves 4
4 baking potatoes
8.8 oz sliced, streaky bacon
7 oz sliced cheese
1 red bell pepper
1 tablespoon flaked salt
2 tablespoons chopped parsley
Slice the potatoes (but not all the way through) VERY thinly. Put them in an oven-proof pan and cook in the lowest part of the oven at 392F for about 1 hour until they are just tender but not mushy.
Fry the bacon but do not crisp it. Split it in the middle. Cut cheese and bell pepper in pieces. Take out the potatoes, sprinkle with salt and insert bacon, cheese and bell pepper between the slices. Put back in the oven for about 5 minutes or until the cheese has started to melt.
Sprinkle with parsley and serve, preferably with a salad.
