FRIED BALTIC HERRING WITH CARROT SALAD
Stekt strömming med morotssallad

Serves 2

8 Baltic herring fillets
salt, white pepper
0.2 cup chopped dill
dried breadcrumbs
2 tablespoons butter or margarine

your own recipe for mashed potatoes

Carrot salad:
2 carrots
1 apple
½ head iceberg lettuce or other
green lettuce
1 tablespoon fresh lemon juice

For serving:
lemon wedges


Make your mashed potatoes.

Rinse the herring fillets and put them skinside down on a baking paper. Sprinkle with salt and pepper. Distribute chopped dill on 4 fillets, put the other 4 skinside up on top and turn around in dried breadcrumbs. Fry over medium heat for about 3 minutes on each side in a frying pan with butter.

Carrot salad:
Peel and roughly grate the carrots. Split, core and cut the apple in wedges, then thinly slice the wedges. Slice the green salad. Mix carrots, apples and lettuce in a bowl and pour on the lemon juice. 

Serve the salad with the fish, lemon wedges and mashed potatoes.
