MERINGUE PASTRIES WITH RASPBERRY CREAM

4 pastries
2 egg whites
some fresh lemon juice
0.4 cup sugar
Filling:
0.8 cup heavy cream
0.4 cup raspberry jam
Decoration:
fresh raspberries
powdered sugar
fresh mint or lemon balm
Preheat oven to 257F.
Beat egg whites and lemon juice with sugar to a firm meringue in a clean bowl with clean beaters. Pipe out 12 rounds, approx 2 inches in diameter, on a baking paper. Bake in the middle of the oven until the meringue feels airy and dry to the touch, about 50 minutes. Place them on a rack.
Beat the cream until thick in a bowl and add raspberry jam. Put the meringues together 3 and 3 with raspberry cream in between and on the top. Decorate with raspberries, sifted powdered sugar and mint or lemon balm.
