PINEAPPLE GRAPEFRUIT JELLY WITH
ELDERBERRY CREAM
Ananas- och grapefruktsgelé med flädergrädde
Serves 4
4 gelatin sheets
or 2 teaspoons gelatin powder
1 small can pineapple slices
in their own juice
1 red grapefruit
0.4 cup water
0.2 cup sugar
0.4 cup concentrated
elderberry drink
For serving:
0.8 cup heavy cream
2 tablespoons concentrated
elderberry drink
or sweet arrack punsch, a very
sweet alcoholic drink
Decoration:
lemon balm
Soak the gelatin sheets in cold water for about 5 minutes, or follow the procedures with the gelatin powder. Cut the pineapple in pieces and put them in a bowl. Split the grapefruit and scoop out the pulp with a teaspoon in as large, whole chunks as possible. Put them in the bowl with the pineapple. Squeeze out the juice from the remaining grapefruit into the saucepan with the pineapple juice. Add water, powdered sugar and elderberry drink in the saucepan and bring to a boil. Remove from heat, add the squeezed gelatin sheets and stir.
Divide the fruit into 4 serving glasses. Pour the jelly over the fruit and leave the dessert in the fridge to set for about 2 hours. Pipe a dab of whipped cream, flavored with elderberry or sweet arrack punsch, in the glasses and decorate with lemon balm.
