FISH AU GRATIN WITH MUSHROOMS
Fiskgratäng med svamp
Serves 3
1 lb 5 oz fish fillet, haddock
or other white fish
salt, pepper
1 tablespoon butter or margarine
7 oz mushrooms
1 tablespoon butter or margarine
2 tablespoons flour
1.6 cup regular milk
salt, pepper
0.8 cup ripe, grated cheese
For serving:
boiled rice
boiled broccoli
Preheat oven to 392F.
Place the fish fillets in a greased, oven-proof pan. Flavor with salt and pepper. Melt the fat and brush the fish. Cover the pan with a baking paper and cook in the middle of the oven for about 10 minutes. Strain and reserve the pan juices.
Trim and slice the mushrooms and sauté them in a saucepan with butter or margarine until the juice that comes out is clear. Stir in the flour and add milk and fish juices while stirring. Let the sauce simmer for 5 minutes. Flavor to taste with salt and pepper.
Spread the sauce over the fish and sprinkle with cheese. Bake in the middle of the oven for about 15 minutes.
Serve with rice and broccoli.
