Serves 4
3 ripe peaches
1.2 cup vanilla creme (from mix)
0.4 cup heavy cream
½ bag small almond biscuits
2 tablespoons sherry
2 cups raspberries
lemon balm
Put the peaches in boiling water and leave them in for about 30 seconds. Take them up and put them in icy water. Peel them, remove the stones and dice the pulp. Make the vanilla creme, beat the cream and stir it into the vanilla creme.
Crush the almond biscuits. Put some of it in the bottom of 4 serving glasses. Drip the sherry over the crumbles. Divide peaches, raspberries and vanilla creme onto it, finish with vanilla creme and remaining biscuits. Decorate with raspberries and lemon balm'.
You can also use canned, drained peaches for the dessert.
