Strawberry Crêpes with Vanilla Zabaglione - Jordgubbscrêpes med vaniljsabayonne

STRAWBERRY CRÊPES WITH VANILLA ZABAGLIONE
Jordgubbscrêpes med vaniljsabayonne

Serves 4

1.1 lb strawberries
0.2 cup sugar

Crêpes:
3 eggs
2 cups regular milk
0.7 cup flour
½ teaspoon salt
1 teaspoon sugar
1 tablespoon butter

Zabaglione:
3 egg yolks
3 tablespoons sugar
0.4 cup sweet white wine
1 teaspoon vanilla flavoring

Decoration:
fresh mint


Rinse, trim and slice the strawberries and mix them with the sugar.

Beat the eggs with half the milk and add flour, salt and sugar. Beat until smooth. Melt the butter and add it together with remaining milk. Bake thin pancakes, grease the pan for the first one. Stack them on a plate with waxed paper in between each. Put a spoonful of strawberries on each pancake, roll them up and put on serving plates.

Mix egg yolks, sugar and wine in a bowl. Place it over a waterbath and beat until the thermometer shows 149F and you have a fluffy egg foam. Remove the bowl and continue beating until cool, about 5 minutes. Beat in the vanilla flavoring.

Spoon the zabaglione over the crêpes, decorate with fresh mint and serve with remaining strawberries.
