SUMMER'S BEST PIE

1 pie, serves 6 to 8
Dough:
1.2 cups flour
1/4 teaspoon baking powder
3½ oz butter or margarine
4 tablespoons sugar
½ beaten egg
1 tablespoon water
Creme:
2 lemons
3 eggs
0.8 cup sugar
3½ oz butter or margarine
0.6 cup heavy cream
Decoration:
2 to 4 cups strawberries
lemon balm
Mix flour, baking powder and sugar, add the fat in small pieces and add egg and water. Roll out the dough in a springform pan, diameter approx 10 inches. Prick the dough and leave in a cold place for about 15 minutes. Bake for about 20 minutes at 392F. Leave to cool completely.
Grate the zest off the well scrubbed lemons. Squeeze out the juice. Beat together eggs and sugar and add lemon zest and juice. Bring to a simmer while beating to a thick creme. Add the butter in pieces and allow to cool.
Beat the cream and stir the lemon mixture into it. Spread it out in the pie crust and decorate with strawberries and lemon balm.
