Chili-Marinated Drumsticks with Parmesan Potatoes - Chilimarinerade kycklingben med parmesanpotatis

CHILI-MARINATED DRUMSTICKS
WITH PARMESAN POTATOES
Chilimarinerade kycklingben med parmesanpotatis

You can make the dip sauce in advance and store cool until serving.

Serves 4

1 lb 15 oz chicken drumsticks
1 lb 15 oz boiled new potatoes
10.6 oz cherry tomatoes,
different colors
2 tablespoons olive oil
1 teaspoon salt
some black pepper
2 tablespoons finely chopped parsley
0.6 cup grated Parmesan cheese

Marinade:
0.2 cup sweet chili sauce
0.2 cup chili sauce
3 tablespoons rapeseed oil
1½ tablespoons Chinese soy sauce

Bean dip:
1.7 oz butter
1 can beans, Cannellini type, 
approx 14 oz
approx 2 tablespoons creme fraiche
3 tablespoons finely chopped
green herbs of your choice
2 tablespoons grated Parmesan cheese
2 teaspoons fresh lemon juice
1 teaspoon salt
some black pepper

Topping:
5.3 oz sugarsnaps

Decoration:
lemon zest
green herbs


Preheat oven to 392F.

Trim the drumsticks. Mix the ingredients for the marinade and leave the drumsticks in for at least 30 minutes. Take them up and drain. Place the drumsticks in a paper-lined roasting pan and cook in the lower part of the oven for about 25 minutes. Take them out.

Spread out the potatoes between the drumsticks in the pan and lightly crush each with a fork. Spread out the tomatoes. Drizzle with oil and add salt and pepper. Chop the parsley and sprinkle it over the surface together with grated cheese. Continue cooking just below the middle of the oven for 10 to 15 minutes.

Bean dip:
Brown the butter by melting it in a saucepan over medium heat until light Brown. Remove from heat, set aside and cool slightly. Rinse the beans carefully and drain. Mix until smooth together with creme fraiche and herbs. Gently add the butter in a fine stream while mixing continuously. Only use the clear butter. Add Parmesan, lemon juice, salt and pepper.

Trim the sugarsnaps and boil in lightly salted water. Pour off the water, take out the roasting pan and top with the boiled sugarsnaps. Decorate with lemon zest and herbs and serve with the bean dip.

Bacon-Wrapped Potatoes with Chive Mayonnaise - Baconlindad potatis med gräslöksmajonnäs

BACON-WRAPPED POTATOES WITH 
CHIVE MAYONNAISE
Baconlindad potatis med gräslöksmajonnäs

Serves 4

5 oz streaky bacon, sliced
16 boiled new potatoes, cold

Chive mayonnaise:
1 egg yolk
1 teaspoon mustard
2 teaspoons white wine vinegar
0.6 cup rapeseed oil
0.2 cup chives
salt, pepper


Preheat oven to 482F.

Wrap half a bacon slice around each potato and place them on a paper-lined baking plate. Cook in the oven until the bacon is nicely colored, about 20 minutes. Turn the potatoes over occasionally while cooking.

Chive mayonnaise:
Mix egg yolk, mustard and vinegar in a bowl. Add the oil in a thin but steady stream while beating. Add chives and mix to a green sauce. Flavor to taste with salt and pepper.

Roast Potatoes with Parmesan and Herb Topping - Rostad potatis med parmesan- och örttopping

Serves 4

2.2 lbs even-sized, small potatoes,
skin on
2 tablespoons garlic cloves
3 tablespoons olive oil
3 tablespoons finely chopped parsley
1 teaspoon salt
some black pepper
0.4 cup mayonnaise

Decoration:
0.6 cup grated Parmesan cheese
chopped parsley


Preheat oven to 437F.

Scrub the potatoes and place on a paper-lined baking plate or in a greased oven-proof pan. Peel and finely chop the garlic. Mix oil, garlic, parsley, salt and pepper, pour it all over the potatoes and blend well. Roast the potatoes just below the middle of the oven for about 25 minutes or until golden and tender.

Mash lightly with a fork and dab out the mayonnaise on top. Sprinkle with grated Parmesan and chopped parsley.

Potatoes Au Gratin with Chèvre and Bell Peppers - Potatisgratäng med chèvre och paprika

AND BELL PEPPERS

2 lbs 9 oz potatoes
2 grilled bell peppers, canned and shredded
½ leek, thinly sliced
2 garlic cloves, thinly sliced
2 cups cream
0.4 cup regular milk
2 teaspoons salt
5.3 oz chèvre cheese


Preheat oven to 392F.

Peel and thinly slice the potatoes. Alternate potatoes, bell peppers, leek and garlic in an oven-proof pan. Mix cream, milk and salt and pour this over the potatoes in the pan. Crumble the cheese on top or slice the cheese. Bake in the middle of the oven for about 50 minutes. If too dark, cover with aluminum foil towards the end of the cooking time.

Serves 4

1 lb 5 oz chicken breast fillets
1 onion
1 tablespoon butter
salt
0.8 cup heavy cream
0.4 cup water
1 tablespoon concentrated
chicken fond
0.4 cup creme fraiche
2 tablespoons chili sauce
1 tablespoon rosé pepper
1 teaspoon green peppercorns
9 cherry tomatoes

Decoration:
2 tablespoons chopped parsley
rosé pepper
green peppercorns

Crushed potatoes:
2.2 lbs potatoes
4 tablespoons olive oil
2 garlic cloves
1.7 oz grated Parmesan cheese
salt, pepper


Split each chicken fillet lengthwise. Peel and chop the onion. Brown the chicken on both sides in a frying pan with butter, add onion and sauté some more. Flavor with salt and transfer to an oven-proof pan. Add cream, water, chicken fond, creme fraiche and chili sauce in the frying pan and bring to a boil. Stir in the crushed rosé pepper and green pepper and pour the sauce over the chicken. Add split tomatoes. Cook in the oven at 392F until the chicken is done, approx 20 minutes.

Crushed potatoes:
Boil the potatoes until almost ready, pour off the water and steam it dry. Place on a baking plate and press them with a fork so that they break slightly. Crush the garlic cloves and mix with the potatoes. Drizzle with oil, sprinkle with cheese and flavor with salt and pepper. Cook in the oven at 392F until colored, about 15 minutes.

Serving:
Sprinkle the chicken with parsley and some extra crushed peppercorns. Serve with the potatoes and vegetables of your choice.

Baked Potatoes with Creamy Chicken - Bakad potatis med krämig kycklingröra

BAKED POTATOES WITH CREAMY CHICKEN
Bakad potatis med krämig kycklingröra

Serves 2

1.1 lb baking potatoes
approx 1 oz green lettuce
leaves
8.8 oz tomatoes

Chicken:
1 grilled chicken "club"
(meaning drumstick and upper
thigh sticks together)
½ small red onion
0.4 cup low-fat creme fraiche
1 tablespoon mayonnaise
1 oz finely grated Parmesan cheese
0.2 cup mixed, chopped fresh herbs,
e.g. thyme, chives and basil
salt, pepper


Preheat oven to 437F.

Prick the potatoes and bake it in the oven for 45 minutes to 1 hour.

Chicken:
De-bone the chicken and throw away the skin (or roast it on a plate in the oven until it's crispy). Cut the chicken in pieces. Finely chop the onion. Mix creme fraiche, mayonnaise, Parmesan, onion and herbs. Flavor to taste with salt and pepper and stir in the chicken.

Cut an X in the potatoes and dab the chicken mix in there. Serve with lettuce and tomatoes.

Onion Potatoes - Lökpotatis

ONION POTATOES
Lökpotatis

Serves 4

2.2 lbs new potatoes
1 onion
2 leeks
1 cup vegetable bouillon
salt, pepper
½ teaspoon crumbled thyme
chopped parsley


Scrape the potatoes. Peel and thinly slice the onion. Trim and slice the leeks. Sauté onions and potatoes, covered, for about 5 to 7 minutes in some fat without coloring. Stir occasionally. Dilute with bouillon and add salt, pepper and thyme. Simmer it all for about 10 minutes or until the potatoes are tender.

Remove the lid towards the end and flavor to taste. Sprinkle generously with chopped parsley.

Ham-Wrapped New Potatoes - Skinklindad färskpotatis

HAM-WRAPPED NEW POTATOES
Skinklindad färskpotatis

20 potatoes

20 new potatoes
20 slices Parma ham,
or the like
some fresh thyme sprigs
2 tablespoons olive oil


Preheat oven to 392F and grill.

Scrub and clean the potatoes. Boil until barely tender in lightly salted water. Take it up and allow to cool. Put some fresh thyme on each potato. Wrap a slice of ham around each and place the potatoes in a greased, oven-proof pan. Drizzle with olive oil.

Grill the potatoes in the middle of the oven for about 20 minutes. Shake the pan a few times during cooking so that the potatoes color evenly.

Serves 4

1.1 lb potatoes
2 teaspoons butter
0.6 cup regular milk
0.6 cup cream
0.8 cup cottage cheese
2 crushed garlic cloves
1 teaspoon salt
some white pepper


Preheat oven to 437F.

Peel and roughly grate the potatoes. Put them in a greased, oven-proof pan. Mix milk and cream with cottage cheese, garlic, salt and pepper. Pour this mixture over the potatoes. Bake in the oven for about 50 minutes. Serve with crisp bacon, sausages or smoked mackerel.

Cheesy Potato Soup - Ostig potatissoppa

CHEESY POTATO SOUP
Ostig potatissoppa

Serves 4

5 potatoes
1 onion
1 small squash
4 cups water
3½ tablespoons meat or
vegetable fond
0.8 cup Cheddar cheese
salt, pepper
5 oz streaky bacon, diced


Peel and dice potatoes and onion. Trim and dice the squash. Sauté potatoes, onions and squash in some fat until the onion is tender and glossy without coloring. Dilute with water and fond. Boil the soup over low heat, covered, for about 10 to 15 minutes or until the potatoes are mushy.

Pour the soup in a mixer or food processor and process to a smooth soup. Pour back into the saucepan. Add the cheese and let it melt. Flavor to taste.

Fry the bacon in the frying pan until crisp. Drain on paper towels. Pour the soup into serving bowls and decorate with diced bacon and some green herbs.

Filled Steaks with Potatoes Au Gratin - Potatisgratäng med fylld biff

FILLED STEAKS WITH POTATOES AU GRATIN

Serves 4

2.2 lbs potatoes
1 onion
1 green bell pepper
0.8 cup grated cheese
salt, pepper
0.8 cup heavy cream
0.4 cup regular milk
1.1 lb very thinly sliced beef,
"minute steaks"
3½ oz cream cheese with herbs
1 oz salami
0.4 cup green olives, pimento-filled
1 tablespoon butter or margarine

For serving:
tomato salad


Preheat oven to 437F.

Peel and slice the potatoes. Peel, split and slice the onion. Trim and shred the bell pepper. Grease a pan and alternate potatoes, onion, bell pepper and cheese, flavor with salt and pepper between the layers. Pour on cream and milk and cook in the oven for 40 minutes. 

Flavor each minute steak with some salt and pepper. Put a slice of salami on each, a dab of cream cheese and sliced olives. Fold up and secure with a toothpick. Fry in some butter in a frying pan, on both sides.

Place the steaks on top of the potatoes and finish cooking in the oven for about 10 minutes. Serve with a tomato salad.

Mashed Roots with Fried Onions - Rotmos med helstekt lök

MASHED ROOTS WITH FRIED ONIONS
Rotmos med helstekt lök

Serves 1

1 small rutabaga (swede)
1 small carrot
1½ potatoes
½ teaspoon salt
2 cups water
2 tablespoons low-fat creme fraiche
5 or 6 small red onions
chopped parsley


Peel rutabaga, carrot and potatoes and cut them in pieces. Pour 6 cups water and ½ teaspoon salt in a saucepan and boil rutabaga and carrot for about 20 minutes, over low heat and covered. Add potatoes and boil for another 20 minutes or until everything is tender. Pour off the water but reserve some. Mash the roots and dilute with the reserved water to a consistency you like. Add creme fraiche and flavor to taste with salt and pepper.

Peel the onions and pre-cook in some lightly salted water for a few minutes. Pour off the water and fry the onions over low heat in 1 teaspoon butter or margarine until the onions are tender. Sprinkle the mashed roots with chopped parsley and serve with the onions.

Potato Cheese Patties - Potatis- och ostbullar

POTATO CHEESE PATTIES
Potatis- och ostbullar

Serves 6

2.2 lbs potatoes
2.6 oz cheese
2 eggs
0.8 cup flour
salt, pepper
2 tablespoons butter

Mushrooms:
10.6 oz mushrooms (champignons)
1 red onion
1 tablespoon butter
1 apple
3½ oz kale


Peel and boil the potatoes until tender. Pour off the water and steam the potatoes until dry. Mash and add grated cheese, eggs and flour, salt and pepper. If the mixture is too sticky, add a little more flour. Shape into flat patties (flatties?) and fry in butter in a frying pan, 3 to 4 minutes on each side.

Mushrooms:
Trim and quart the champignons. Peel and chop the onion. Sauté mushrooms and onion in butter in a frying pan. Core and roughly Dice the apple. Remove any rough parts from the kale and shred the kale. Mix apple and kale into the mushrooms and sauté for a few minutes. Flavor with salt and pepper.

Serve the mushrooms with the potato patties.

Serves 4

1 lb 12 oz potatoes
1 onion
14 oz kassler (warm-smoked
boneless loin of pork)
salt, pepper
0.8 cup heavy cream
0.4 cup regular milk
0.8 cup grated cheese
10 cherry tomatoes


Peel and slice potatoes and onions. Dice the kassler. Alternate potatoes, onion and kassler in a greased, oven-proof pan. Flavor with salt and pepper between the layers but be gentle with the salt, as the kassler is salty. Pour on cream and milk and cook in the oven for 30 minutes. Sprinkle with cheese and put on split tomatoes. Bake in the oven for about 15 minutes, until the potatoes are tender.

Hasselback Potatoes with Bacon and Cheese - Hasselbackspotatis med bacon och ost

HASSELBACK POTATOES WITH BACON AND CHEESE
Hasselbackspotatis med bacon och ost

Serves 4

4 baking potatoes
8.8 oz sliced, streaky bacon
7 oz sliced cheese
1 red bell pepper
1 tablespoon flaked salt
2 tablespoons chopped parsley


Slice the potatoes (but not all the way through) VERY thinly. Put them in an oven-proof pan and cook in the lowest part of the oven at 392F for about 1 hour until they are just tender but not mushy. 

Fry the bacon but do not crisp it. Split it in the middle. Cut cheese and bell pepper in pieces. Take out the potatoes, sprinkle with salt and insert bacon, cheese and bell pepper between the slices. Put back in the oven for about 5 minutes or until the cheese has started to melt.

Sprinkle with parsley and serve, preferably with a salad.

Serves 4

10.6 oz spicy sausages, e.g.
chorizo or other strong sausages
5 boiled potatoes
3½ oz cherry tomatoes, different colors
1 onion
2 garlic cloves
1 red bell pepper
½ fresh red chili fruit
4 tablespoons butter for frying
0.4 cup regular milk
5 eggs
0.8 cup ripe grated cheese
1 teaspoon salt
some black pepper
some powdered chili

Decoration:
some lettuce, e.g. arugula


Preheat oven to 392F.

Slice sausages and potatoes. Split the tomatoes. Peel and finely chop onion and garlic. Trim and dice bell pepper and chili. First brown the sausages, then the potatoes, in butter in a frying pan. Sauté onions, bell pepper, chili and garlic until glossy and smooth in butter in the pan without coloring. Spread out all ingredients in a greased oven-proof pan.

Beat together milk and eggs and beat in cheese and spices. Pour this over the ingredients in the pan. Bake in the lower part of the oven until the gratin is nicely colored, about 20 minutes. Sprinkle with some arugula or other green leaves.

Crushed Potatoes with Bacon and Broccoli - Krossad potatis med bacon och broccoli

CRUSHED POTATOES WITH BACON AND BROCCOLI

Serves 4

12 middle-sized, "floury"
potatoes, e.g. King Edward
1 teaspoon salt
½ teaspoon paprika
3½ oz small broccoli florets
0.8 cup grated cheese
5 oz streaky bacon

Paprika butter:
1.7 oz butter
1 crushed garlic clove
1 bunch parsley
some paprika


Boil the potatoes unpeeled. Preheat oven to 482F. Boil the broccoli florets for 5 minutes or until suitably tender. Spread out the potatoes on a baking plate and press each potato once so that it crushes slightly. Flavor with salt and sprinkle with paprika, then put the plate in the oven for 10 minutes.

Make the paprika butter. Take out the potatoes, top with broccoli and divide half of the butter on the potatoes. Sprinkle with cheese and put back in the oven for about 5 minutes. Fry the sliced bacon.

Divide remaining butter on the potatoes when serving and top with fried bacon.

Fillet of Pork Rydberg - Fläskfilé Rydberg

FILLET OF PORK RYDBERG
Fläskfilé Rydberg

Serves 4

1 pork fillet, approx 1 lb 10 oz
1 lb 12 oz firm potatoes
2 onions
oil for frying
butter for frying
4 egg yolks
0.4 cup chopped parsley

Mustard creme:
0.8 cup creme fraiche
2 teaspoons Dijon mustard
2 teaspoons coarsely ground, sweet mustard


Cut meat and potatoes in cubes, approx ½ x ½ inch. Put the potatoes in a bowl with cold water to prevent from darkening. Dice the onion, about the same size as the potatoes. Pour off the water from the potatoes, heat up some oil in a frying pan and fry the potatoes over high heat while stirring. Lower the heat to medium after 2 to 3 minutes and continue frying until done while stirring gently. Flavor with salt and pepper and keep the potatoes warm.

Stir all ingredients together for the mustard creme.

Fry the onion in some butter while stirring until slightly colored. Flavor with salt and pepper.

Clean out the frying pan and heat up 1 tablespoon butter. Put in the meat when the butter starts to turn brown. Fry over high heat until nicely colored all around. Don't stir if not necessary. Flavor with salt and pepper.

Put onion, potatoes and meat on a warm serving plate and top with egg yolks and parsley. Serve with the mustard creme.

Crushed Garlic Potatoes with Strong Cheese - Krossad vitlökspotatis med stark ost

Serves 4

12 large new potatoes
or 24 small ones
3 garlic cloves
3½ oz butter
1.7 oz strong cheese, sliced
or grated
cherry tomatoes
chives


Preheat oven to 437F.

Boil the potatoes until barely tender and steam off in an oven-proof pan. Press on each potato with your palm or with a fork. Sprinkle with crushed garlic and cover with sliced butter. Finish with sliced or grated cheese.

Bake the potatoes in the middle of the oven for 10 to 15 minutes. After half the time, add a bunch of tomatoes and let them bake with the potatoes. Take it out, sprinkle with chopped chives and serve right away, e.g. with some tasty sausages or anything else you like.

Ground Meat and Potatoes Au Gratin with Orange Salad - Köttfärs- och potatisgratäng med apelsinsallad

GROUND MEAT AND POTATOES AU GRATIN
WITH ORANGE SALAD

Serves 4

2 garlic cloves
1 onion
1.1 lb ground meat (beef + pork)
1 tablespoons oil
1 can crushed tomatoes, 14 oz
2 tablespoons tomato paste
1 tablespoon dried basil
or 0.4 cup fresh, chopped basil
1½ teaspoons salt
some pepper
1 lb 12 oz ready-made potatoes au gratin,
I'm sure you can get that, or home-made
5½ oz grated cheese
some paprika

Orange salad:
oranges
carrots


Peel and chop garlic and onion. Fry them in a frying pan and transfer to a pot. Fry the ground meat in the same frying pan with oil and add that to the pot. Pour in the crushed tomatoes, tomato paste and basil and simmer for about 5 minutes. Flavor with salt and pepper.

Place the ground meat sauce in an oven-proof pan and top with the potatoes au gratin. Sprinkle with grated cheese and paprika and cook in the oven at 437F for about 15 minutes, until heated through. 

Decorate with basil and cherry tomatoes and serve with grated carrots mixed with oranges in pieces.
