Potato Cheese Patties - Potatis- och ostbullar

POTATO CHEESE PATTIES
Potatis- och ostbullar

Serves 6

2.2 lbs potatoes
2.6 oz cheese
2 eggs
0.8 cup flour
salt, pepper
2 tablespoons butter

Mushrooms:
10.6 oz mushrooms (champignons)
1 red onion
1 tablespoon butter
1 apple
3½ oz kale


Peel and boil the potatoes until tender. Pour off the water and steam the potatoes until dry. Mash and add grated cheese, eggs and flour, salt and pepper. If the mixture is too sticky, add a little more flour. Shape into flat patties (flatties?) and fry in butter in a frying pan, 3 to 4 minutes on each side.

Mushrooms:
Trim and quart the champignons. Peel and chop the onion. Sauté mushrooms and onion in butter in a frying pan. Core and roughly Dice the apple. Remove any rough parts from the kale and shred the kale. Mix apple and kale into the mushrooms and sauté for a few minutes. Flavor with salt and pepper.

Serve the mushrooms with the potato patties.
