STRAWBERRY FROMAGE CAKE
Fromagejordgubbstårta
1 cake, about 10 pieces
2 large egg whites
1 egg
0.7 cup powdered sugar
7 oz almonds
1 teaspoon baking powder
Strawberry fromage:
5 gelatin sheets
or 2½ teaspoons gelatin powder
3 eggs
0.4 cup sugar
grated zest from 1 lemon
0.2 cup diluted strawberry drink
0.6 cup strawberry jam
7 oz strawberries
1.2 cup heavy cream
Decoration:
strawberries
0.6 cup heavy cream
Preheat oven to 302F.
Grind the almonds and mix it with 0.3 cup powdered sugar mixed with baking powder. Beat the egg whites until stiff. Beat the egg with 0.4 cup powdered sugar until light and fluffy. Stir in egg whites and almond mix gently into the egg batter.
Draw a circle on a baking paper that will fit the bottom of a springform pan, diameter approx 9 inches, cut it out and place in the pan. Grease the pan well on the bottom and the inside, then flour it. Pour in the batter and bake in the middle of the oven at 35 to 40 minutes or until dry to the touch. Take out of the pan and allow to cool on a rack.
Soak the gelatin in cold water for about 5 minutes, or do as you normally do with the powder. Beat eggs and sugar until light and fluffy. Squeeze out excess liquid from the gelatin, heat the diluted strawberry drink and melt the gelatin. Stir the gelatin mix into the egg batter.
Mash the strawberries and stir them into the egg batter together with strawberry jam and grated lemon zest. Beat the cream until frothy and stir it into the batter. Put the cake layer back into the cleaned pan and pour the fromage over it, even out the surface and store cold for at least 3 hours.
Decorate with dabs of whipped cream and strawberries.
Enjoy!
