Mazarin Cuts - Mazarinsnitt

MAZARIN CUTS
Mazarinsnitt

40 cuts

3½ oz almonds
14 oz room-tempered
butter or margarine
1.6 cup sugar
4 eggs
7 to 8 drops of bitter
almond essence
2.8 cups flour
2 teaspoons baking powder
2 tablespoons vanilla sugar
1.2 cup regular milk

Icing:
2.6 oz butter or margarine
2 cups powdered sugar
2½ teaspoons vanilla sugar
2 tablespoons cold coffee


Preheat oven to 347F.

Grind the almonds. Stir fat and sugar until white and add eggs, almonds and bitter almond essence. Blend in flour, baking powder, vanilla sugar and milk and stir to a smooth batter. Pour in a roasting pan, 12 x 16 inches, lined with baking paper. Spread out the batter and bake for 15 to 20 minutes.

Melt the butter for the icing. Stir in powdered sugarc, vanilla sugar and coffee and spread this over the lukewarm cake. Allow the icing to set and then cut in squares that you then cut diagonally into triangles.
