CHEESECAKE SQUARES WITH BERRY TOPPING

Layer:
8 oz butter
1.8 lb digestive biscuits
4 tablespoons sugar
Filling:
almost 2 lbs cream cheese
8 oz lightly thawed raspberries
8 oz lightly thawed strawberries
6 eggs
0.6 cup sugar
Topping:
3 cups creme fraiche
0.6 cup sugar
3 tablespoons vanilla sugar
Decoration:
8.8 oz fresh blueberries
10.6 oz fresh raspberries
Preheat oven to 347F.
Melt the butter in a saucepan. Mix the digestives to a crumble in a food processor, add the melted butter and sugar and blend well. Flatten the crumbly dough out on a greased baking paper in an oven-proof pan, 12 x 16 inches, and bake in the lower part of the oven for about 15 minutes.
Place cream cheese and lightly thawed, drained berries in a bowl together with eggs and sugar. Mix to a smooth batter. Pour this onto the digestive layer and bake in the lower part of the oven for about 25 minutes.
Meanwhile, blend creme fraiche, sugar and vanilla sugar in a bowl for the topping. Spread this onto the warm filling and continue baking for about 10 minutes.
When the cheesecake has cooled, place in the fridge overnight to set properly. This is important. Decorate with fresh berries and cut in squares when serving.
