APPLE CARDAMOM SQUARES
Äppelkaka med kardemumma
30 squares
10.6 oz butter
1.6 cup sugar
1 tablespoon vanilla sugar
1 tablespoon whole cardamom seeds
6 eggs
2 teaspoons baking powder
2.4 cups flour
0.4 cup heavy cream
Filling:
4 apples
crushed nib sugar
For serving:
whipped cream
Preheat oven to 392F.
Beat room-tempered butter, sugar, vanilla sugar and mortared caramom seeds until fluffy. Beat in the eggs, one by one. Mix baking powder and flour and stir it into the batter together with cream. Spread out the batter in a baking paper-lined roasting pan.
Filling:
Core and cut the apples in thin wedges. Place them in the batter and sprinkle with the nib sugar.
Bake in the middle of the oven for about 30 minutes. Serve lukewarm with whipped cream.
