Orange Chocolate Squares - Apelsin- och chokladrutor

ORANGE CHOCOLATE SQUARES
Apelsin- och chokladrutor

30 squares

2 eggs
1.2 cup sugar
5.3 oz butter
1.8 cups flour
1 tablespoon baking powder
2 teaspoons vanilla sugar
2 tablespoons cocoa
0.6 cup regular milk

Coconut topping:
2.6 oz butter
0.4 cup dark molasses
0.4 cup fresh orange juice
0.8 cup sugar
2.4 cup flaked coconut


Preheat oven to 437F.

Beat eggs and sugar until white and fluffy. Melt the butter. Mix flour, baking powder, vanilla sugar and cocoa. Turn in the flour mixture alternating with butter and milk. Blend to a batter and pour in a roasting pan lined with baking paper, 8 x 12 inches. Bake for 20 minutes and allow to cool.

Coconut topping:
Melt the butter in a saucepan. Stir in the molasses, orange juice, sugar and coconuts and simmer for 5 minutes. 

Spread the coconut topping gently over the cake and bake for another 7 minutes. Allow to cool and cut in squares.

Apple Cardamom Squares - Äppelkaka med kardemumma

APPLE CARDAMOM SQUARES
Äppelkaka med kardemumma

30 squares

10.6 oz butter
1.6 cup sugar
1 tablespoon vanilla sugar
1 tablespoon whole cardamom seeds
6 eggs
2 teaspoons baking powder
2.4 cups flour
0.4 cup heavy cream

Filling:
4 apples
crushed nib sugar

For serving:
whipped cream


Preheat oven to 392F.

Beat room-tempered butter, sugar, vanilla sugar and mortared caramom seeds until fluffy. Beat in the eggs, one by one. Mix baking powder and flour and stir it into the batter together with cream. Spread out the batter in a baking paper-lined roasting pan.

Filling:
Core and cut the apples in thin wedges. Place them in the batter and sprinkle with the nib sugar.

Bake in the middle of the oven for about 30 minutes. Serve lukewarm with whipped cream.

Cheesecake Squares with Berry Topping - Cheesecakerutor med bärtopping

CHEESECAKE SQUARES WITH BERRY TOPPING
Cheesecakerutor med bärtopping

24 squares

Layer:
8 oz butter
1.8 lb digestive biscuits
4 tablespoons sugar

Filling:
almost 2 lbs cream cheese
8 oz lightly thawed raspberries
8 oz lightly thawed strawberries
6 eggs
0.6 cup sugar

Topping:
3 cups creme fraiche
0.6 cup sugar
3 tablespoons vanilla sugar

Decoration:
8.8 oz fresh blueberries
10.6 oz fresh raspberries


Preheat oven to 347F.

Melt the butter in a saucepan. Mix the digestives to a crumble in a food processor, add the melted butter and sugar and blend well. Flatten the crumbly dough out on a greased baking paper in an oven-proof pan, 12 x 16 inches, and bake in the lower part of the oven for about 15 minutes.

Place cream cheese and lightly thawed, drained berries in a bowl together with eggs and sugar. Mix to a smooth batter. Pour this onto the digestive layer and bake in the lower part of the oven for about 25 minutes.

Meanwhile, blend creme fraiche, sugar and vanilla sugar in a bowl for the topping. Spread this onto the warm filling and continue baking for about 10 minutes.

When the cheesecake has cooled, place in the fridge overnight to set properly. This is important. Decorate with fresh berries and cut in squares when serving.

ORANGE CAKE WITH WALNUTS
Apelsinkaka med valnötter

50 pieces

10.6 oz butter
2.4 cups sugar
8 eggs
3.2 cups flour
1 tablespoon baking powder
1.2 cup soured cream
grated zest from 2 oranges
0.2 cup fresh orange juice
4.4 oz walnuts

Icing:
2.8 cups powdered sugar
5 tablespoons fresh orange juice
walnuts
shredded orange peel


Preheat oven to 392F.

Beat room-tempered butter and sugar until fluffy. Beat in the eggs, one by one. Mix flour and baking powder and stir into the batter together with soured cream, orange zest and juice. Roughly chop the walnuts and stir them into the batter. Spread out in a baking paper-lined roasting pan and bake in the middle of the oven for 30 minutes. Allow to cool.

Icing:
Stir together powdered sugar and orange juice and spread this over the cake. Allow to set. Cut in squares, then in triangles, and decorate with walnuts and shredded orange peel.

Nougat Squares - Nougatrutor

NOUGAT SQUARES
Nougatrutor

24 squares

7 oz butter or margarine
4.4 oz soft nougat
0.8 cup sugar
4 eggs
1.2 cup flour
1 teaspoon vanilla sugar

Topping:
3½ oz nougat
1 tablespoon heavy cream
coconut chips


Preheat oven to 347F.

Stir butter, nougat and sugar until white and fluffy. Add the eggs, one by one, while beating. The batter may look curdled, but it comes back together in the oven. Mix flour and vanilla sugar and turn this into the batter. Spread it out in a baking paper-lined pan, 8 x 12 inches. Bake just below the middle of the oven for 35 minutes and allow to cool.

Topping:
Melt nougat and cream over a waterbath. Spread it on top of the cake and sprinkle with coconut chips. Allow the topping to set and cut the cake in squares.

White Chocolate Squares - Vita chokladrutor

WHITE CHOCOLATE SQUARES
Vita chokladrutor

24 squares

7 oz white chocolate
7 oz butter
4 eggs
0.8 cup sugar
1.4 cup flour
2½ oz roughly chopped 
white chocolate

Decoration:
whipped cream
dark chocolate


Preheat the oven to 347F.

Chop the chocolate and melt the butter in a saucepan. Remove from heat and stir in the chocolate until melted. Beat eggs and sugar together without it getting fluffy. Blend in flour and the butter-chocolate mixture. Turn in the chopped white chocolate. Pour the batter in a paper-lined roasting pan, 8 x 12 inches, and bake in the lower part of the oven for 20 minutes and allow to cool completely.

Cut the cold cake into squares and decorate with whipped cream. Melt the dark chocolate and pipe out crowns on a baking paper. Let them set and decorate the squares.

40 cuts

3½ oz almonds
14 oz room-tempered
butter or margarine
1.6 cup sugar
4 eggs
7 to 8 drops of bitter
almond essence
2.8 cups flour
2 teaspoons baking powder
2 tablespoons vanilla sugar
1.2 cup regular milk

Icing:
2.6 oz butter or margarine
2 cups powdered sugar
2½ teaspoons vanilla sugar
2 tablespoons cold coffee


Preheat oven to 347F.

Grind the almonds. Stir fat and sugar until white and add eggs, almonds and bitter almond essence. Blend in flour, baking powder, vanilla sugar and milk and stir to a smooth batter. Pour in a roasting pan, 12 x 16 inches, lined with baking paper. Spread out the batter and bake for 15 to 20 minutes.

Melt the butter for the icing. Stir in powdered sugarc, vanilla sugar and coffee and spread this over the lukewarm cake. Allow the icing to set and then cut in squares that you then cut diagonally into triangles.

Quick and Easy Strawberry Cake - Snabbakad jordgubbskaka

QUICK AND EASY STRAWBERRY CAKE
Snabbakad jordgubbskaka

40 squares

4 eggs
1.6 cup sugar
3½ oz butter
0.4 cup flaked coconut
2.2 cup flour
4 teaspoons baking powder
2 teaspoons vanilla sugar
0.8 cup regular milk
8 oz frozen strawberries

Decoration:
whipped cream
strawberries
candy eggs


Preheat oven to 392F.

Beat eggs and sugar until white and fluffy. Melt the butter. Mix coconut, flour, baking powder and vanilla sugar and stir into the batter together with melted butter and milk. Spread out the batter in a roasting pan, 12 x 16 inches, lined with baking paper. Cut the frozen strawberries in pieces and distribute them over the cake and bake for 25 minutes.

Allow to cool and cut in Squares. Decorate with cream, strawberries and candy eggs.

CHOCOLATE SQUARES WITH NUT TOPPING

30 squares

8.8 oz butter
6 eggs
2.4 cups sugar
0.4 cup regular milk
1.8 cup flour
1 cup cocoa
2 teaspoons baking powder
2 teaspoons vanilla sugar

Nut topping:
2.6 oz hazelnuts
1 oz pistachios
3½ oz walnuts
1.7 oz pecans
5.3 oz butter
0.8 cup sugar
0.4 cup white molasses
0.4 cup flour
0.2 cup regular milk


Preheat oven to 347F.

Melt the butter and allow to cool slightly. Beat together eggs and sugar and stir in milk and butter. Mix flour, cocoa, baking powder and vanilla sugar and sift it into the batter. Blend until smooth and spread it out in a baking paper-lined roasting pan, 12 x 16 inches. Bake in the middle of the oven for 20 minutes.

Very roughly chop the nuts and mix all ingredients for the topping in a saucepan. Heat for a few minutes while stirring. Spread out on the cake and bake for about 10 minutes. Allow to cool and cut in squares.

Shortcrust Lemon Squares - Citronrutor med mördegsbotten

SHORTCRUST LEMON SQUARES
Citronrutor med mördegsbotten

36 squares

1.4 cup flour
0.2 cup sugar
7 oz butter

Filling:
3 eggs
0.8 cup sugar
0.2 cup flour
2 teaspoon vanilla sugar
finely grated zest from 2 lemons
0.4 cup fresh lemon juice

Decoration:
powdered sugar


Quickly mix flour, sugar and butter to a dough, preferably in a food processor. Flatten the dough out in a baking paper-lined roasting pan, 9 x 9 inches. Place in the fridge for about 30 minutes and heat the oven to 392F. Pre-bake the layer in the lower part of the oven for 10 minutes.

Stir together eggs and sugar in a bowl. Add flour mixed with vanilla sugar, lemon zest and juice. Pour the filling in the pan and bake until done in the lower part of the oven for about 15 minutes. It's supposed to be a little sticky. 

Allow to cool, then cut in squares and sift with powdered sugar.

Almond Apricot Squares - Mandelrutor med aprikoser

ALMOND APRICOT SQUARES
Mandelrutor med aprikoser

14 oz almond paste
4 eggs
0.2 cup flour
1½ teaspoon baking powder
1 can apricot halves, approx 14 oz
2.6 oz dark baking chocolate


Preheat oven to 347F.

Roughly grate the almond paste and put in a bowl. Add the eggs, one by one, while beating vigorously until the batter is fluffy and airy. Mix flour with baking powder and stir it into the batter. Pour in a greased, floured roasting pan, approx 8 x 10 inches, and bake on a rack in the lower part of the oven for about 25 minutes. 

Drain the apricots. Take out the pan and place the apricot halves over the cake. Put back in the oven and bake for another 15 minutes or until the cake is nicely colored and a tester comes out dry. Leave in the pan for a while before unmoulding and is allowed to cool.

Melt the chocolate over a waterbath or in the microwave. Drizzle the chocolate over the cake and cut in squares.

Saffron Squares with Orange Icing - Saffransrutor med apelsinglasyr

SAFFRON SQUARES WITH ORANGE ICING

24 squares

3 eggs
1.2 cup sugar
1.8 cup flour
2 teaspoons baking powder
0.017 oz (yes I know, very specific!)
ground saffron
7 oz melted butter
fresh juice from ½ orange

Icing:
1.2 cup powdered sugar mixed
with some cane sugar
2 tablespoons fresh orange juice
3½ oz candied, chopped orange peel


Grease and flour a roasting pan, approx 10 x 12 inches, or line it with baking paper. 

Beat eggs and sugar until white and fluffy. Mix flour, baking powder and saffron in a bowl. Stir in melted butter, orange juice and flour mixture into the egg batter and stir to a smooth mixture. Pour in the pan and bake at 347F in the lower part of the oven for 25 to 30 minutes. Allow to cool in the pan for 10 minutes before unmoulding. Allow to cool completely.

Mix powdered sugar and orange juice. Spread the icing over the cake and distribute the candied orange peel on top. Leave until the icing has set, then cut in squares.

Almond Squares with Blackcurrant Icing - Mandelrutor med svartvinbärsglasyr

ALMOND SQUARES WITH BLACKCURRANT ICING
Mandelrutor med svartvinbärsglasyr

45 squares (well, rectangles really, but ...)

2 cups flour
0.4 cup sugar
1 tablespoon baking powder
1 tablespoon vanilla sugar
6.2 oz butter or margarine
1 egg

Filling:
0.6 cup almonds
2 bitter almonds
8.8 oz almond paste
1 egg
1 oz butter or margarine

Icing:
5 tablespoons blackcurrant jelly
2 cups powdered sugar
3 tablespoons water


Preheat oven to 347F.

Chop together flour, sugar, baking powder, vanilla sugar and butter to a crumbly mixture. Lightly whisk the egg. Add it to the flour mixture and work to a dough. Roll out and place in a roasting pan lined with baking paper. Leave in the fridge for 30 minutes. It's easier to spread out the almond paste when the dough is cold.

Scald, skin and finely grind the almonds. Mix with grated almond paste, beaten egg and butter. Spread this over the cold dough and bake for 20 minutes.

Icing:
Stir together blackcurrant jelly, powdered sugar and water and spread this icing over the warm cake. 

Allow the cake to cool and cut it in rectangular pieces.

Summer Cake with Strawberries - Sommarkaka med jordgubbar

SUMMER CAKE WITH STRAWBERRIES
Sommarkaka med jordgubbar

12 squares

1 cup sugar
1.2 cup potato starch
1½ teaspoons vanilla sugar
1½ teaspoons baking powder
3 eggs
0.6 cup liquid margarine
0.2 cup strawberries


Preheat oven to 347F.

Grease and flour a roasting pan, 8 x 12 inches. Measure sugar, potato starch, vanilla sugar and baking powder. Beat the eggs and add them together with the margarine. Stir so that everything blends well, but not more. Pour the batter in the pan and sprinkle the berries over the surface. Bake on the middle shelf for about 30 minutes. Allow to cool and cut in squares.

3 tablespoons fresh lemon juice

2 teaspoons vanilla sugar
1 tablespoon baking powder
1 can apricot halves, approx 14 oz


Preheat oven to 392F.

Beat eggs and sugar until white and fluffy. Melt the butter, allow to cool and stir it in together with milk and lemon juice. Mix flour, baking powder and vanilla sugar and turn this into the batter. Pour in a baking paper-lined roasting pan. Cut the drained apricot halves in wedges and spread them out over the batter. Bake just below the middle of the oven for 15 minutes. Allow to cool and cut in squares.

Streusel Cake with Lingonberry Jam - Strösselkaka med lingonsylt

STREUSEL CAKE WITH LINGONBERRY JAM
Strösselkaka med lingonsylt

1.8 cups flour
0.6 cup sugar
3 teaspoons baking powder
5.3 oz butter or margarine
1 egg
0.8 cup lingonberry jam

Streusel:
0.6 cup oats
0.4 cup sugar
3½ oz almond paste
2.6 oz melted butter or margarine


Preheat oven to 392F.

Mix flour, sugar and baking powder. Add butter and finely divide it to a crumbly mixture. Beat the egg, stir it into the crumble and quickly work to a dough. Flatten it out in a greased roasting pan, approx 8 x 12 inches and divide the jam over the cake.

Roughly grate the almond paste. Blend it with oats, sugar and melted butter to a streusel. Sprinkle this over the cake. Bake in the middle of the oven for about 15 to 20 minutes. Allow to cool and cut in squares.

Peach Squares - Mjuka persikorutor

PEACH SQUARES
Mjuka persikorutor

Approx 24 squares

1 can peaches in their own
juice, approx 14 oz
3½ oz butter
0.6 cup juice from the peaches
3 eggs
1.2 cup sugar
1 tablespoon vanilla sugar
2 teaspoons baking powder
1 teaspoon ginger
1.8 cups flour

Decoration:
powdered sugar


Preheat oven to 347F.

Pour off the juice from the peaches, but reserve it. Drain and cut the peaches in thin wedges. Melt the butter and mix with the peach juice. Beat eggs and sugar until white and fluffy. Stir in the butter mixture into the egg batter. Mix vanilla sugar, baking powder, ginger and flour and sift it into the batter while stirring. Gently blend in the peach wedges.

Pour the batter in a greased, floured roasting pan, approx 10 x 14 inches. Bake in the lower part of the oven for about 30 minutes. Allow the cake to cool before cutting in squares. Sift with powdered sugar before serving.

WHITE STICKY CAKE SQUARES

5.3 oz soft butter
0.8 cup sugar
2 eggs
1 cup flour
2 teaspoons baking powder
1 teaspoon vanilla sugar
0.2 cup regular milk
3½ oz white chocolate
3½ oz frozen blueberries

Decoration:
7 oz cream cheese, e.g. Philadelphia
0.4 cup powdered sugar
blueberries
lemon balm


Preheat oven to 347F.

Stir butter and sugar until smooth and add the eggs, one by one, while beating. Mix flour, baking powder and vanilla sugar and sift into the batter. Stir in milk and roughly chopped chocolate. Pour the batter in a roasting pan lined with baking paper, 12 x 8 inches. Sprinkle with blueberries and bake for 30 minutes. Allow to cool and cut in small squares.

Stir together cream cheese and powdered sugar and decorate the squares together with blueberries and lemon balm.

2.4 cups sugar
4 eggs
3.2 cups flour
4 teaspoons baking powder
finely grated zest from 2 oranges
0.8 cup sour cream

Icing:
2 cups powdered sugar
4 tablespoons fresh orange juice
1.7 oz candied orange peel


Preheat oven to 347F.

Stir butter and sugar until fluffy. Beat the eggs, one by one. Mix flour with baking powder and stir it into the batter. Blend in orange zest and sour cream and stir to a smooth batter. Pour in a roasting pan, lined with baking paper, and bake in the middle of the oven for 20 minutes.

Stir together powdered sugar and orange juice and spread it over the cooled cake. Sprinkle with candied orange peel and allow the icing to set. Cut the cake in squares.

Apple Squares with Icing - Glaserad äppelkaka i långpanna

APPLE SQUARES WITH ICING
Glaserad äppelkaka i långpanna

30 squares

3½ oz butter
0.8 cup regular milk
4 eggs
1.6 cups sugar
2.2 cups flour
4 teaspoons baking powder
2 teaspoons vanilla sugar
6 apples
0.4 cup sugar
2 tablespoons ground cinnamon
0.4 cup flaked almonds

Icing:
0.8 cup powdered sugar
2 teaspoons water


Preheat oven to 392F.

Peel, core and dice the apples. Mix with sugar and cinnamon. Melt the butter in a saucepan and add the milk. Beat eggs and sugar until fluffy. Stir in the flour mixed with baking powder and vanilla sugar together with the butter and milk.

Pour the batter in a roasting pan, 12 x 16 inches, lined with baking paper. Sprinkle with diced apple and flaked almonds. Bake for about 25 minutes. Allow to cool.

Icing:
Mix powdered sugar with water, ice the cake and cut in squares.
