SHORTCRUST LEMON SQUARES

36 squares
1.4 cup flour
0.2 cup sugar
7 oz butter
Filling:
3 eggs
0.8 cup sugar
0.2 cup flour
2 teaspoon vanilla sugar
finely grated zest from 2 lemons
0.4 cup fresh lemon juice
Decoration:
powdered sugar
Quickly mix flour, sugar and butter to a dough, preferably in a food processor. Flatten the dough out in a baking paper-lined roasting pan, 9 x 9 inches. Place in the fridge for about 30 minutes and heat the oven to 392F. Pre-bake the layer in the lower part of the oven for 10 minutes.
Stir together eggs and sugar in a bowl. Add flour mixed with vanilla sugar, lemon zest and juice. Pour the filling in the pan and bake until done in the lower part of the oven for about 15 minutes. It's supposed to be a little sticky.
Allow to cool, then cut in squares and sift with powdered sugar.
