SPAGHETTI WITH SQUASH AND ANCHOVIES
Spaghetti med squash och sardeller
Serves 4
14 oz spaghetti
2 garlic cloves
4 anchovy fillets
1.1 lb cherry tomatoes
1 squash
3½ oz grated Parmesan cheese
olive oil
lemon juice
salt, black pepper
Boil the pasta and prepare the other ingredients while it's cooking.
Finely chop garlic and anchovies. Split the tomatoes. Split the squash lengthwise and remove the pips, then roughly grate it or shred with a potato peeler. Mix garlic, anchovies, tomatoes, squash and Parmesan. Drain the pasta and stir it into the anchovy mixture.
Drizzle with some olive oil and squeeze some lemon juice over it. Flavor with salt and black pepper and blend well.
