RED LENTIL SOUP WITH GARLIC SAUSAGES
Röd linssoppa med vitlökskorv
Serves 4
1 large onion, chopped
1 tablespoon oil
6 cups vegetable bouillon
1.2 cup red lentils
2 cans crushed tomatoes
(each approx 14 oz)
2½ carrots, thinly sliced
1½ teaspoon salt
black pepper
1 to 3 crushed garlic cloves
approx 1 tablespoon tomato paste
2 bay leaves
approx 1 teaspoon dried thyme
3 garlic sausages or any kind
you prefer
Sauté the chopped onion in the oil in a large saucepan or pot. Add water, bouillon, rinsed lentils and all other ingredients except for the sausages. Bring to a boil and simmer the soup for 15 to 20 minutes. Cut the sausages in pieces and let them boil in the soup for a few minutes.
Serve with bread.
