Yellow Tomato Soup - Gul tomatsoppa

YELLOW TOMATO SOUP
Gul tomatsoppa

Serves 4

1 can yellow tomatoes,
approx 14 oz
2 shallots
1 garlic clove
½ fresh red chilifruit
1 tablespoon olive oil
1.2 cup water
1 vegetable bouillon cube
0.4 cup risoni pasta
1 teaspoon sugar
salt, pepper
0.4 cup creme fraiche
0.4 cup basil leaves


Peel and finely chop onions and garlic. Split, trim and finely chop the chili. Sauté onions, garlic and chili in oil in a pot, without coloring. Add yellow tomatoes, water and bouillon cube and bring to a boil. Add risoni and boil until done, approx 10 minutes. Stir occasionally so that it doesn't stick to the bottom of the pot.

Flavor with sugar, salt and pepper. Mix creme fraiche with chopped basil and flavor with salt and pepper, then serve a dab of it in each plate.
