Quick Redcurrant Cake - Hastkaka med vinbär

QUICK REDCURRANT CAKE
Hastkaka med vinbär

1 cake, 8 pieces

1.2 cup flour
1½ teaspoon baking powder
0.6 cup sugar
2.6 oz butter or margarine
0.6 cup regular milk
5.3 oz redcurrants
3 tablespoons crushed nib sugar
1.7 oz butter or margarine


Preheat oven to 392F.

Mix flour, baking powder and sugar in a bowl. Cut the butter in small pieces and finely divide it into the flour mixture. Add milk and quickly work to a dough. Flatten it out in a breased springform pan, diameter approx 9 inches. Sprinkle with berries and nib sugar. Put on the butter in dabs and bake in the lower part of the oven for about 30 minutes.
