CHERRY CAKE
Körsbärskaka
10 pieces
0.8 cup flour
3½ oz butter
0.2 cup water
0.4 cup roughly chopped almonds
grated zest from 1 lemon
2 kiwis, diced
approx 2 cups pitted, fresh cherries
0.8 cup creme fraiche
0.6 cherry marmalade
Quickly work a dough of the flour, butter and water. Leave in the fridge for an hour. Flatten it out in a springform pan, diameter 9 inches. Sprinkle with almonds and lemon zest. Bake for about 15 minutes at 437F or until golden. Allow to cool.
Loosen the cake from the pan. Divide diced kiwifruit, cherries, creme fraiche and marmalade over the surface.
