Almond Cake with White Chocolate Mascarpone - Mandeltårta med vit choklad och mascarpone

ALMOND CAKE WITH WHITE
CHOCOLATE MASCARPONE
Mandeltårta med vit choklad och mascarpone

10 pieces

Layer:
7 oz almond paste
3 eggs
0.4 cup sugar
0.6 cup flour
½ teaspoon baking powder

Filling:
0.6 cup heavy cream
7 oz white chocolate
8.8 oz mascarpone cheese

Topping:
4 cups strawberries
green herbs
powdered sugar
edible flowers if desired


Finely grate the almond paste. Beat eggs and sugar until fluffy. Blend together flour and baking powder and sift this into the egg batter together with almond paste. Pour the batter in a greased and floured springform pan, diameter about 9 inches. Bake in the lower part of the oven at 392F for about 15 minutes. Take it out and allow to cool.

Bring the cream for the filling to a boil in a saucepan. Chop the chocolate and place it in a bowl, pour on the warm cream and stir so that the chocolate melts. Add mascarpone and stir. Leave the filling in the fridge until set. 

Take out the filling and dab it out onto the layer. Top with split strawberries and sift with powdered sugar. Decorate with lemon balm or mint and serve.
