LOVELY CHOCOLATE MAZARIN CAKE

Layer:
8 oz butter
1.6 cup flour
0.3 cup sugar
1 egg yolk

Filling:
4.4 oz butter
14 oz almond paste
3 eggs
0.2 cup cocoa
2 teaspoons vanilla sugar
2.6 oz dark chocolate

Icing:
1.4 cup powdered sugar
2 tablespoons water
yellow household coloring
rainbow-colored sprinkles
(optional)


Preheat oven to 392F.

Layer:
Mix butter in pieces, flour, sugar and egg yolk to a dough, preferably in a food processor. Roll it out on baking paper to a rectangle, 8 x 12 inches, and place in a roasting pan of the same size. Prick the bottom and pre-bake for 10 minutes. Allow to cool slightly. Lower the oven temperature to 350F.

Filling:
Stir room-tempered butter and grated almond paste. Beat in the eggs, one by one, and blend in cocoa and vanilla sugar. Finely chop the chocolate and mix into the almond batter. Spread out over the cake layer and bake for 25 minutes. Allow to cool.

Icing:
Stir powdered sugar and water to an icing and color it yellow, if you wish. Spread out on the cake and sprinkle with sprinkles (that looks funny) should you want to. Allow to set and cut in squares.
