RASPBERRY SCONES

8 scones
14 oz flour
1½ teaspoons baking powder
½ teaspoon salt
2.7 oz cold butter, diced
2.6 oz raspberries
2.6 oz sugar
2 teaspoons vanilla sugar
0.4 cup regular milk
0.2 cup buttermilk
1 beaten egg
For serving:
powdered sugar
cream cheese
grated lemon zest
Mix flour, baking powder and salt in a bowl. Crumble the butter into the mixture. Mix raspberries, sugar and vanilla sugar and blend it into the flour mixture. Lightly knead the dough to a lump.
Roll it out to a circle, about 1 inch thick, on a floured surface. Place the dough circle on a paper-lined baking plate. Mark 8 pieces with a sharp knife but don't cut all through. Brush with beaten egg.
Bake at 437F for about 20 minutes. Now it's easy to break yourself a scone or five. Decorate with some powdered sugar and serve with cream cheese and lemon.
