RASPBERRY COCONUT CAKE
Hallonkaka med kokos
1 cake, 8 pieces
4.4 oz butter
0.8 cup sugar
2 eggs
0.8 cup flour
1 tablespoon vanilla sugar
0.4 cup flaked coconut
4.4 oz raspberries
Decoration:
raspberries
For serving:
whipped cream
Preheat oven to 347F.
Melt the butter in a saucepan. Blend in sugar and eggs and stir in flour, vanilla sugar and flaked coconut. Spread out the batter in a greased springform pan, diameter approx 9 inches. Sprinkle with raspberries and bake in the middle of the oven for 25 minutes.
Allow the cake to cool, decorate with lots of fresh raspberries and serve with whipped cream.
