Rhubarb raspberry jam:
5.3 oz raspberries
12.3 oz rhubarb
12.3 oz special jam sugar
(contains fruit pectine, I
bet you can get something
similar where you are -
makes the jam ready super quickly)
Shortcrust:
7 oz soft butter
0.4 cup sugar
1.8 cups flour
1 teaspoon baking powder
2 teaspoons vanilla sugar
Jam:
Rinse raspberries and rhubarb. Thinly slice the rhubarb. Make the jam according to the package instructions. Allow to cool.
Shortcrust:
Stir fat and sugar until fluffy. Mix flour, baking powder and vanilla sugar, stir it into the batter and blend to a dough. Shape to a roll and cut in approx 35 pieces. Roll into balls, make a thumbprint in each and add some jam in the hollows.
Bake at 347F in the middle of the oven for 15 to 20 minutes.
